Oil is oil no matter how you pour it. It will taste a little different from veggie oil but taking into consideration the amount you are using (3 or 4 tbsp. at best) it shouldn't be that bad. Now...if you are talking about using it to season your pan (the cast iron or griddle you are cooking them on) that has potential too. Pancakes cook at a very low temp so no worries about burning or smoking the oil. Also...griddles and cast iron are practically non stick as it is. You are literally only going to use a 1/4 tsp poured onto a paper towel...rub on the cooking surface and voila. A little extra lube for your pan.
People should stop being so fragile and uptight about olive oil...you can use it for ANYTHING! I have even used it in cakes and to fry chicken!

Yes, just don't use extra virgin, use a lighter flavored variety of olive oil, even pomace olive oil. EV olive oil has too strong of a flavor to use, and it doesn't stand the heat to well it burns too easily, EV is used mostly for flavor. I use olive oil for almost everything and the lighter varieties work well for frying.
For those who say the flavor is too strong, I beleive you are using EV, pomace oil has very little olive flavor. Key to olive oil is the darker (greener) the oil the stronger the flavor, and the lighter the oil the higher the smoking point (burning). If you are making an insalata caprese, or bruschetta, use the greenest freshest olive oil you can find for their flavor. The lighter colored oils have little if any of the typical olive oil flavor.

Yes you can, although Olive oil is very rich in flavor, and is more commonly used in marinades, sauces, and salad dressings. Canola & vegetable oil have milder flavors, which makes it good for baking, or in pancakes. It is just a matter of your taste, as your recipe will still work out fine. Hope this helps you!

You could but the intense fruitiness (is that a word?) may not taste right with maple syrup. I would go with corn, soybean, or canola oils because they will not impart any funkiness to the traditional pancake batter.
If you must use olive oil make sure it is light and not extra virgin.

I always use olive oil when making pancakes so they don't stick to the pan. ( use the cheaper grade so that you don't get the olive oil flavor). Joe P

Of course, I use some on my cast iron skillet, just before putting the batter down. I also put a dab in the batter while mixing it. Mmmm, pancakes sounds good.

In a pinch, yes you can, but I don't like the taste as much as when I use regular vegetable oil.

yes you can if you add some to your pancake mixture it gives a nice taste and stops the mixture from sticking to the pan . although I´m sure you´ll be using a non stick pan
