When we set out to eat healthy, we eat seafood. Mahi Mahi is a really good fish, but any fish will do, just coat the fish in olive oil, and some lemon juice and seasonings (i usually either blacken it or use garlic) also you can make shrimp scampi by soaking the shrimp in olive oil and lemon juice and garlic, a nice salad and some fresh bread and maybe some blackeyed peas or your vegetable of choice or some pasta, and you have a very healthy meal. if you dont like the idea of using olive oil you can use butter or margarine, but its not as healthy.
If you or your bf do not like fish, chicken is great and healthy too... the important thing is to up your veggies, take out the fat and dont fry anything. i love to go to www.recipegoldmine.com they have thousands of recipes and they are pretty good. from salmon and cream cheese omlettes, to the food they serve at chilis, they have a very good selection of healthy recipes too. good luck and email me if you decide to make it and want some more advice. thanks....
forgot to mention, if you broil the fish and shrimp, its easy takes about fifteen minutes and its not alot of mess... good luck

me and my friend kind of made this recipe up but its the best rice/curry thing EVER! takes about 20 mins...it's kinda healthy, you can add more vegetables if you want, but it does taste really really good and its pretty simple

ingredients
-about 200g rice
-175g frozen peas/green beans
-2tbsp oil plus a bit extra
-1 chopped onion
-3 rashers of streaky bacon chopped up
-1tbsp curry paste/powder
-1 egg beaten
-soy sauce [optional]
-250g [whatever you want] e.g chicken breast chopped,prawns etc

boil water in a pan, add the rice and leave for 10 mins to cook

while thats cooking, heat the oil in a frying pan/wok, add onion and bacon and stir fry for about 3 mins [until golden]

add curry paste/powder, stir for like 3 seconds, and then put the prawns/chicken in and stir for like 1 minute

with a big spoon push the mixture to 1 side of the pan and add a little drop of oil on the empty side. pour the beaten egg into the oil and cook like you do scrambled egg. when its done stir it all in together

add the rice and peas. mix all together. serve straight away

if you want add a little bit of soy sauce, for spicyness lol
