just about anything green....sauted cabbage.....with some shredded green apples mixed in is delicious....something savory with a little sweet.....yum...

I like to serve pan-fried pork chops with sauteed onions slices + garlic & tomato sauce or with a colourful white wine mix fruit sauce (diced apple, pear, pineapple, dried apricots, prunes + a pinch of cinnamon powder) top with some roasted walnuts or almonds.
Any boiled green vegetables or green salads go well with baked pork chops too.
I also like to have thinly shredded cabbage with deep fried pork cutlets (add lemon juice, mayo and a bit olive oil).

Candied sweet potatoes or how how about fried green beans. Fry a little bacon til crispy. Remove from pan , discard some of the bacon fat but leave a little in pan add canned green beans,drained,garlic powder and some chopped onion. When onions are translucent and beans have started to shrivel, add crumbled bacon . Fry for a few minutes more.

I think that potatoes are a great addition. I put my pork chops in a baking dish, cover them with thinly sliced potatoes, and then make a mixture of sour cream and cream of mushroom soup and pour it over that and bake in oven at 360 till done.

here's my secret recipe, you'll love it and everybody will:
KOHLRABI, you can get it in every supermarket (green cabbage like things) it's easy too!
you need i'd say 1 goodsized (~4" dia) for 2 people.
peel the kohlrabi, cut it into frenchfry like pieces (top to bottom!!)
boil in salted water for ~15 min (from cold) make sure they still have a bite.
make a white sauce (here's a link if you don't know how http://southernfood.about.com/cs/saucerecipes/ht/white_sauceht.htm)
put a little nutmeg and a lot of (fresh or frozen) parsley into it, put the cooked kohlrabi into it and serve.
for great chops, try a breading of crushed KELLOGS orig. cornflakes and a little crushed chili/salt. yummi!
