Boil finely chopped cabbage (4 cups) in 3 tablespoons of milk and 1 tbsp of butter, salt and pepper to taste for about 7 minutes.
If a lot of water comes out of the cabbage. put the heat on high and allow it to dry up. You will love the smell in the house and the taste. Grate some cheddar cheese over the top as garnish.

Hi! In Italy we cook lots of white cabbage(slice it like coleslaw but not as thin, with lots of sliced onion and a small amount of oil and saute it until all the water has been absorbed which takes quite a while. It because like sour kraut without the sour. At the end of cooking (It should be quite soft) add a dallop of butter, salt and fresh pepper. It's really yum and uses up quite a lot of cabbage for one meal.

Cabbage with Pork Sausage
(makes 2-3 servings)

1/2 head cabbage, coarsely chopped or shredded
1/2 pound loose lean pork sausage, or links with casing removed
1 medium onion, coarsely chopped or sliced and rings cut in halves
1 medium tart apple, pealed, cored and chopped or sliced
salt, to taste

In a large skillet, brown sausage, slowly at first to render some of the fat, then add onion. Cook until sausage is done and onion is transparent. Pour off all but about one tablespoon fat. Stir in apple pieces and cook for a minute or two, then add cabbage and reduce heat and cover. Heat for a few minutes, until cabbage begins to steam. Remove cover, stir, and repeat until all cabbage is cooked. Taste and add salt, if necessary. Serve with crusty hot rolls and apple or currant jelly.

I love klushki.which is cabbage and noodles. I add ham for extra flavor. My grandmother would also add mushrooms. It is very simple to make, Simply fry your cabbage down ,add cooked ham and boiled noodles.(You can buy klushki noodles at your super market but I use wide noodles) Season to taste with salt and pepper. The Secret to good klushki is to add ALOT of butter.Enjoy!
