I assume it is dishes made from offal and for poorer people .

If chittilans are pork intesines in some place is France it is considered a delicacy and cooked in duck fat , but what are the rest?

Poor people?Umm...Not exactly.It's southern,though,and defintiely African american.


Chitlings or chitlins [not chittilans,never heard of that] is a popular food amongst African-American culture including collard greens.Collard greens is a type of cooked green vegetable used for a side dish.
Chitlings are cooked hog intestines.African american dish?absolutely.French?Never.

Grits is a typically american potato meal.ANOTHER favorite meal amongst African-American culture.
Basically everything you mentioned is ,like, 'Soul food'.You probably dunno what soul food is either,lol.

These are traditional southern foods not just for poor folks or African Americans.
I was raised on grits, greens, cornbread and fried green tomatoes and love them to this day. Greens of any kind are quite healthy and yummy when sauteed with garlic and liitle bits of bacon etc,,
Grits are creamy and awesome with cheese, they taste like cream of rice and once refrigerated and firm can be sliced and fried just like polenta. Grits are still served as a traditional part of breakfast in the south.
If you've never tried this stuff, don't knock it.

In the southern US it has NOTHING to do with whether you are poor or not...it's just a regular staple (especially of Sunday dinners!)
Chitlins are pork intestines - I've usually seen them boiled or bbq'd in the oven.
Grits - are indeed ground corn, usually it is cooked with boiled water, add salt, pepper, butter, maybe cheddar cheese. You got a great breakfast or sidedish.
Collard greens are a green like kale, spinach, turnip greens, etc. They are boiled, usually with a piece of pork meat (ham) and are highly nutritious.
Cornpone - usually referred to as cornbread or cornpudding. Made of corn meal & water or milk, salt...usually spoonfulls are fried until crispy. Or it could be baked in a casserole type dish for a more cakelike consistency. Corn pudding basiclly just adds milk, butter, etc to make it creamier.

These are foods of the southern US. Grits are a ground corn cereal...sort of like Farina. Cornpone is corn bread. Collared greens are a plant that is very bitter and must be cooked a certain way to be tasty.

These are foods eaten by poor folks in the South, especially black people. Grits is ground up mush, kind of like Farina with sand in it. Collard greens are a vegetable, somewhat like bitter tasting kale. Cornpone is cornbread, usually fried in grease.

I am no gourmet, but I would have to be awfully hungry to eat any of these.
