Blueberry and Pecan American Muffins
4 oz (110 g) small blueberries
2 oz (50 g) pecan nuts, finely chopped
5 oz (150 g) plain flour
½ level tablespoon baking powder
¼ level teaspoon salt
1 large egg
1½ oz (40 g) caster sugar
4 fl oz (110 ml) milk
2 oz (50 g) butter, melted and cooled slightly
½ teaspoon pure vanilla extract
For the topping:
2 oz (50 g) pecan nuts, finely chopped
10 demerara sugar cubes, crushed
Pre-heat the oven to gas mark 6, 400°F (200°C).
Start off by sifting the flour, baking powder and salt into a large bowl. Then, in a separate bowl, mix together the egg, sugar, milk, melted butter and vanilla extract. Now return the dry ingredients to the sieve and sift them straight on to the egg mixture (this double sifting is essential because there won't be much mixing going on). What you need to do now is take a large spoon and fold the dry ingredients into the wet ones – quickly, in about 15 seconds. Don't be tempted to beat or stir, and don't be alarmed by the rather unattractive, uneven appearance of the mixture: this, in fact, is what will ensure that the muffins stay light.
Now fold the blueberries and pecan nuts into the mixture, again with a minimum of stirring: just a quick folding in. Spoon in just enough mixture to fill each muffin cup (if you're not using papers, grease the tins well), then top with chopped pecans and crushed sugar. Bake on a high shelf of the oven for 20 minutes for minis or 30 minutes for the larger ones or until well risen and brown.
Remove the muffins from the oven and cool in the tins for 5 minutes before transferring to a wire rack (if they are in paper cases remove them from the tins straightaway).

200g/7¼oz self-raising flour
1 tsp baking powder
85g/3oz caster sugar
1 lemon, zest only
1 free-range egg
100ml/3½fl oz milk
50g/1¾oz blueberries
To serve
drizzle honey
icing sugar
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place all the ingredients in a bowl and combine together gently.
3. Divide the mixture between the indents in a non-stick muffin tray. Bake in the oven for 15 minutes or until risen and golden.
4. Remove from the tin and place on a wire rack to cool slightly.
5. Serve warm with a dusting of icing sugar and drizzle of honey
or Banana bran muffins
115g/4¼ oz butter
100g/3½ oz brown sugar
3 bananas, mashed
115ml/4¼ fl oz milk
1 tsp vanilla extract
2 free-range eggs
175g/6¼ oz wholemeal flour
100g/3½ oz wheat bran
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
Handful chopped walnuts, to taste
Method
1. Preheat the oven to 190C/375F/Gas 5 and grease a muffin tin or line with muffin cases.
2. In a large mixing bowl, cream the butter and brown sugar until fluffy. Add the bananas, milk, vanilla and eggs and mix well.
3. Combine the flour, bran, baking powder, baking soda and salt and blend into the banana mixture. Stir in as many walnuts as you desire and pour the mixture into the muffin tray or cases.
4. Bake for 20-25 minutes or until a toothpick inserted into the centre of the muffin comes out clean. Cool in the tray for five minutes then place on a wire rack to cool completely

INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, combine bananas, sugar, egg and melted butter. Add flour mixture, and beat until smooth. Scoop into muffin pans.
Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

I am no chef (thats why I married one lol) so when Im feeling like actually doing some baking, I buy Betty Crockers ready mixed packet stuff lol.

1 1/2 teaspoons vanilla extract
1/4 cup poppy seeds

Preheat oven tp 375F. Sift together flour, baking soda, baking powder
and salt. Set aside.
In a large mixing bowl, cream butter and sugar at medium speed
of electric mixer until fluffy, scraping bowl often. Add egg lemon juice
and substitute; beat well.
Add flour mixture alternately with sour cream, vanilla; beat at low speed
until blended. Fold in poppy seed and lemon zest.
Fill muffin cups lined with paper baking cups 2/3 full. Sprinkle tops
with additional granulated sugar.
Bake in 375F oven for 18 to 20 minutes until a toothpick inserted in
the center comes out clean.

For topping, combine all ingredients and rub together
with fingertips until completely blended. Set aside.
For muffin mix, combine dry ingredients in a bowl or
on wax paper and stir to combine. Beat eggs in a
medium bowl. Beat in milk and butter. Add dry
ingredients and give 10 or so vigorous strokes. Add
apple pieces and stir a few more times.
Put a spoonful of batter into each muffin cup, divide
half the topping among the muffins, spoon on remaining
batter, then sprinkle with remaining topping. Bake at
400 degrees for 25 minutes or until lightly browned.
