If you have some mayo you could make chicken salad. Boil the chicken, when its done chop it up, add boiled eggs, diced onions, mayo, and a little relish or cut up some pickles if you have them. I also add a dash of sugar and maybe a little salt and pepper. I'd leave the peanuts out though. You can make sandwhiches or eat it with crackers.

CHICKEN GOUJONS

Crush peanuts into crumbs
Finely chop onion
Separate eggs into two bowls
Whisk egg yolks with a dash of milk, salt & pepper
Saute chopped onions in frying pan until soft

Cut chicken into strips, one at a time dip in egg yolk mix, then roll in peanut crumbs until coated.
Lay on baking tray drizzle with oil and bake in oven at 200oc for 10-15 minutes until crispy.

Meanwhile lightly whisk egg whites, add the cooked onion, salt & pepper. Add to heated frying pan, lightly cook on both sides
sprinkle with cheese & gratinate under a salemander or grill until golden brown.

Fold in half, then into quarter, lay it in the middle of the plate as the garnish, then neatly stand the crispy chicken goujons around it & serve with a sauce of your choice.
