Yes, even though they practice this freedom every day-- the law still says that they have to be "re-mimed" !!

You question assumes an incorrect view of the law. You assume silence means not talking. Mostly, that's true, but gesturing has also recieved treatment in the law regarding the 5th Amendment and Miranda.

Also, the cops don't have to read you your Miranda rights at all ever. However, after the person is detained or arrested and the cops want to now question the person, the cops must read the person his Miranda rights or the answers cannot be used in court by the prosecution. Nevertheless, the Miranda rights don't factor into an arrest unless the cops want to question the person being arrested. As such, an arrest is valid without Miranda warnings.

And one other thing. Mimes do talk when they aren't performing.

technically yes because the arrest is not valid if the plaintiff is not read their Miranda rights, at least in the US
