They always book to capacity. I went the week after Thanksgiving to a sold out cruise departing Galveston to the Caribbean. (It wasn't cold at all)

It really depends, but it can be. The different seasons bring different crowds. June and July most kids are out of school so more families are able to go. But people seeking a budget friendly cruise may not be able to afford it, so that can keep capacity down a little.
For the months later in the year most kids are in school, but this is usually a value season, so rates are lower. People that cruise all the time and don't have kids and/or don't work, people looking for a good deal, etc. are usually onboard.
Cruises are becomming more and more popular and each season offers something for a different group of people. For the most part, if you go during value season you will notice less people onboard than peak, but cruise dates all through the year can be booked full.
If you want the better chance of having fewer people on the cruise, that would be in the later months, but it doesn't always work that way.

Yes, anytime school is in session and people are not usually taking a Holiday. The best part is prices are lower too. Consider where you are sailing and think about weather, you know, like Hurricane Season...go in Nov/Dec for best rates and no Hurricanes

Especially those that cruise in Alaska and the Carribean due to storms and cold weather!

Fewer people, no; fewer kids, yes! Usually you can find much cheaper prices, too.
