Simmered Brains
1. Wash beef, veal, lamb or pork brains in cold water.
2. Soak 1/2 hour in salted water, allowing 1 tablespoon salt per quart water.
3. Remove membrane.
4. Place in pan; add water to cover, 1 teaspoon salt, 1 tablespoon lemon juice or vinegar for each quart water.
5. Cover; simmer over low heat 15-20 minutes.
6. Drain; drop into cold water; drain again.
7. Serve with Mushroom, Tomato, or Butter Sauce.
8. Allow four servings per pound.

Here is a quicky and I guarantee !!
1. serve whatever you already planned before
the guest to be added, but before sit down ..
2. boil a big pot of water and put a whole pack of spaghetti for 10 minutes or less (make sure it is not over or under cooked)
3. drain off the hot water, rinse with cold water
put back the spaghetti to the same pot and turn the heat to hi.
4. put in 1 and half cup of vegetable oil (any oil except Oliver oil, avoid shortenings)
5. pour in one cup of soy sauce
(oil and soy sauce can be adjusted on your next batch)
6. under high heat, stir for 4 minutes and serve
7. it tastes great !!

I'm big on getting some of those rotisserie chickens, cutting them up, adding some instant potatoes or potatoe salad, a green salad, hot rolls and ice cream for dessert!
