I made this absolutely wonderful alfredo sauce from scratch for my sweetie on Valentine's Day. Well, I sort of made WAY too much of it and quite frankly I'm sick to death of eating the left overs. NEway...does anyone have another suggestion on how I can use this up...like other receipes? Or can you freeze alfredo?

I'd really hate to throw it out but it's just gonna sit in my frig and go bad. I'm totally over chicken alfredo LOL

you could probably take half an onion, attach 2 cloves and a bay leaf to it, and simmer it in the sauce for about 15 minutes, then make a roux (equal parts fat and flour) and incorporate that into the alfredo, and then finish with a little more cheese if not too thick already. while doing all this, boil up some macaroni, add macaroni to sauce, pour in baking dish, cover with bread crumbs, sprinkle with paprika, and there you have it, mac and cheese. sort of.

You can feeze Alfredo sauce.
Easy Alfredo Sauce

Ingredients:
1/2 cup butter
8 ounces cream cheese (Room Temperature Best)
2 tablespoons flour
2 cups Whole milk (Cream or Half and Half)
1/2 cup parmesan cheese
Salt and pepper to taste

***Lower Fat recipe***
1 Stick butter (margerine just doesn't work good)
8 ounces lowfat cream cheese of Nefuchatel cheese
2 cups (1%) or skim milk
4 tablespoons flour
1/2 parmesan cheese
salt and pepper.

Directions:
Melt butter over a low heat (do not burn of the sauce will be nutty flavor). With a wisk, mix in the cream cheese and wisk until compeletly combined. (At first it will seem like it won't combine, but keep stiring until you do). Once you have the butter and cream cheese mixed, pour in the milk (Cream or Half and Half) the flour and continue to wisk. Once the mixture heats up and the cream cheese mixture and milk have combined into a smooth cream, add salt, peper and parmasian cheese and stir until combined. Let sit for a few minutes to thicken.

Lower Fat recipe. Follow the directions above. This will be a slightly thinner sauce, but will thicken upon standing.

SEAFOOD ALFREDO

1 pkg. commercial alfredo sauce mix
Seafood in any combination desired. Fresh or cooked leftover seafood or
poultry
Onion, chopped
Green or red bell pepper, chopped
Mushrooms, sliced
1 clove of garlic, minced
Olive or vegetable oil
Egg noodles or rice

Follow directions on package of Alfredo sauce mix. Saute seafood quickly, set aside. In same pan add onions, peppers, mushrooms and garlic and saute until soft. Mix seafood, vegetables and Alfredo sauce. Serve hot with noodles or rice of choice. Can be ready in 15 minutes.

You could try adding tomato sauce for a pink sauce or maybe even a little vodka with the tomato sauce(cook it off) to change it up a bit. You could probably use it as a base for a bisque as well, such as crab, corn, lobster etc.

You could buy one of those Boboli premade pizza crusts and cover it with the alfredo. Top with chopped spinach (if you like spinach) and mozzarella. Pizza with white sauce is awesome.

If food has any dairy product in it you shouldn't keep it for more than 24 hours. Toss it.
