Sesame Chicken
INGREDIENTS:
3 whole boneless chicken breasts
Marinade:
2 tablespoons light soy sauce
1 tablespoon cooking wine or dry sherry
a few drops of sesame oil
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons water
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vegetable oil
Sauce for Sesame Chicken:
1/2 cup water
1 cup chicken broth
1/8 cup vinegar
1/4 cup cornstarch
1 cup sugar
2 TB dark soy sauce
2 TB sesame oil
1 tsp chili paste, or more if desired
1 clove garlic (minced)
Other:
2 tablespoons toasted sesame seeds
3 1/2 - 4 cups peanut oil for deep-frying
PREPARATION:
Toast the sesame seeds and set aside.
Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.
To prepare the sauce: mix together all of the sauce ingredients. Pour them into a small pot and bring to a boil, stirring continuously.
Turn the heat down to low and keep warm while you are deep-frying the chicken.
To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.
Just before you are finished deep-frying, bring the sauce back up to a boil.
Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice.

1 green onion, thinly slice
2 tablespoons toasted sesame seeds
3 1/2-4 cups peanut oil (for frying)
1. cut the chicken into small, approximately 1-inch cubes.
2. Add the marinade ingredients and marinate the chicken for atleast 20 minutes.
3. While the chicken is marinating, prepare the sauce.
4. Mix together all of the sauce ingredients except for the green onion.
5. Pour them into a small pot and bring to a boil.
6. Turn the heat down to a low and keep warm while you are deep-frying the chicken.
7. Heat oil for deep-frying.
8. When the oil is ready, add the marinated chicken a few pieces at a time, sliding them into oil carefully, and not to overcrowd.
9. Deepfry until golden brown.
10. Remove the cooked chicken pieces from the oil and drain on paper towels.
11. Repeat with the remainder of the chicken.
12. Just befoe you are finished deep-frying, bring the sauce back up to a boil.
13. Mix in the green onion.
14. Place the chicken on a large platter and pour sauce over.
15. Sprinkle with the sesame seeds.
16. Serve over rice.

6 boneless skinless chicken breasts
1/4 cup honey
1/4 cup soy sauce
1/2 cup water
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds
1. Cut chicken breast into 1 inch strips.
2. Heat a large non-stick skillet that has been
sprayed with Pam, over medium-high heat.
3.Cook chicken strips for about 6 minutes until no longer pink.
4. Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
5. Whisk until no corn starch lumps appear.
6. Pour sauce mixture into skillet with chicken.
7. Cook until sauce thickens slightly. You can add more water if sauce is too thick.
8. Sprinkle with sesame seeds.
9. Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.

SESAME CHICKEN
Leg Quarters - debone and cut into bite sizes
1 part flour
1 part cornstarch
garlic powder
salt
pepper
cooking sherry wine
water
sesame seeds (brown in low heat then set aside)
Season chicken with garlic powder, salt and pepper. Marinate in sherry wine and water, flour and cornstarch.
Prepare Sauce:
2 tablespoons hoisin sauce
2 tablespoons oyster sauce
4 tablespoons soy sauce
1 cup sugar
1 cup water
1/4 cup vinegar
2 tablespoons cornstarch (thickener)
Dredge marinated chicken in flour. Deep fry in wok until golden brown and crispy. Pour in sauce and sprinkle with sesame seeds.
