Does someone know of a great recipe for potato pancakes, using a dry mashed potato mix?

Easy Potato Pancakes

Ingredients:
1 can (14 oz.) chicken broth (1 3/4 cups)
Generous dash Pepper
1 1/2 cups instant mashed potatoes flakes or buds
1 green onion coarsely chopped

HEAT broth and pepper in saucepan to a boil. Remove from heat. Add potato flakes and onion and stir until liquid is absorbed. Shape potato mixture into 4 (4") pancakes.
COOK pancakes in nonstick skillet until browned on both sides.

Just use a regular recipe and substitute 1/2 the flour with the instant mashed potatoes. The mashed potatoes will absorb a lot of water. Grated potatoes make a better pancake, its worth the effort.

Not if you want them to be great! Sorry. Great calls for real grated potatoes. BUT if you want to make something similar and tasty with mashed potatoes I'd suggest a Potato Kugel. If you are unfamiliar with them that's basically a Potato Pudding/Casserole.

There are a variety of recipes, and you could web search them, but the basic ingredients are mashed potatoes, onions, eggs, salt, pepper, butter. Maybe a little milk if it wouldn't make it too loose. Put the mixture in a greased/sprayed with Pam baking dish and cook for about 45 min to an hour or until browned on top.

You could use a similar mixture to make potato pancakes but not only will the texture be off, but it will soak up a lot of oil. So that's my suggestion for a similar taste but one that I think you'll be happier with.
