A former yoga teacher of mine believes that the founder of Dahn, Seung Heun Lee did this once. Is it medically possible?

Absolutely not. A healthy adult can generally survive without food for several weeks, but this is obviously not good for the body. Organ damage will occur after long periods without food.

People have also been known to survive long periods without sleep, but again this is very hard on you.

The real factor is water. Without water, people will not last more than a few days, with the specific amount of time depending largely on the climate and temperature.

So many self-proclaimed yogis make ridiculous supernatural claims. They are all liars. What you are saying is not medically possible.
