Adobe Acrobat.

But really, editing a PDF is like using "white out" on a type written page. It's better to create the document you wish, then save it as a PDF. (Microsoft Office and many other software applications allow you to "save as" a PDF.)

You can edit PDF"s in OpenOffice. It is free
