NGREDIENTS:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 tablespoons cocoa
1 1/2 oz red food coloring
1 teaspoon salt
2 1/2 cups flour
1 teaspoon vanilla
1 cup buttermilk
1 teaspoon soda
1 tablespoons vinegar
PREPARATION:
Cream shortening; beat in sugar gradually. Add eggs, one at a time; beat well after each addition. Make paste of cocoa and food coloring; add to creamed mixture. Add salt, flour and vanilla alternately with buttermilk, beating well after each addition. Sprinkle soda over vinegar; pour vinegar over batter.

Stir until thoroughly mixed. Bake in 3 8-inch pans or 2 9-inch pans for 30 minutes at 350°.

Easy Red Velvet Cake:

40 min 10 min prep

1 box white cake mix, with pudding in the mix
3 eggs
8 tablespoons margarine
1 cup buttermilk
2 ounces red food coloring
4 tablespoons baking cocoa

1. Preheat oven to 350.
2. Mix all ingredients in large mixing bowl.
3. Beat until well blended-- about 3 minutes.
4. Pour batter evenly into two greased and floured 8 or 9 inch round pans.
5. Bake at 350 for 30 minutes.
6. Let cool in pan for 10 minutes.
7. Turn from pan and let cool completely.
8. Frost with cream cheese icing.

I highly reccomend this Red Velvet Cake Recipe. I have tried other ones and this is by farrrrr the best...hope you enjoy as much as i did!!

1/2 cup shortening
1 1/2 cups white sugar

4 tablespoons red food coloring
1 teaspoon salt
1 teaspoon vanilla extract
1 cup buttermilk
2 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1 tablespoon distilled white vinegar
5 tablespoons all-purpose flour
1 cup milk
1 cup white sugar
1 cup butter
1 teaspoon vanilla extract
Grease two 9 inch round pans. Preheat oven to 350 degrees F (175 degrees C).
Cream shortening and 1 1/2 cups sugar WELL. Add eggs and beat well.
Make a paste of cocoa and red food coloring. Add to creamed mixture. Mix salt, 1 teaspoon vanilla and buttermilk together. Add alternately the flour with the milk mixture to the creamed mixture. Mix soda and vinegar and FOLD INTO CAKE BATTER. DON'T BEAT OR STIR NOW.
Bake for 30 minutes.
To Make Icing: Cook 5 Tablespoons flour and milk over low heat till thick, stirring constantly. LET COOL THOROUGHLY! While cooling, cream 1 cups sugar, butter and 1 teaspoon vanilla. Beat this well till light and fluffy. Add to flour mixture and beat until of a good spreading consistency. DON'T ICE CAKE TILL COOL!

I've made a red velvet cake from scratch with two different recipes and to tell the truth--Duncan Hines tastes just as good with less hassles. Here's a good cream cheese frosting recipe:

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1/4 cup (1/2 stick) butter or margarine, softened

1 tsp. vanilla

1 pkg. (16 oz.) powdered sugar (about 4 cups), sifted


BEAT cream cheese, butter and vanilla in large bowl with electric mixer on medium speed until well blended.

ADD sugar gradually, beating until well blended after each addition.

Frost your cake and top with chopped pecans.

You can also buy red velvet cake mix in the box at the super market. Duncan Hines or Betty Crocker.
