Chicken and Rice

Brown the chicken, mix together some rice and mushroom soup and some milk, leaving lots of liquid for the rice to absorb. Place all in casserole dish and bake at 375 for about 45 minutes or until chicken is done and bubbly.

This is super simple and yummy (just not totally low cal). It's a variety of oven baked chicken. Skin chicken (parts or breasts are fine). I use a plastic bag to prepare the coating. Add Rice Krispies (yup the breakfast cereal), salt, pepper, paprika and if you want just a little onion and garlic powder but ok without. Crush with your hands. It does not have to be a total powder...some shapes are good for texture/crunch.

Wash and dry the chicken. Coat with a thin layer of Mayonnaise! Sounds crazy but it's awesome. It creates a seal and keeps all the moisture in, so it will end up super succulent. Just rub some all over the chicken part then toss it in the bag and shake. It's best if you have an rack in baking pan so the air can come under but still ok if you just spray some pam in a baking pan. Bake approx 30 min or until done (depending on size).

notes; I have never used anything but Helmann's so no clue who it would be with another brand but I would think Miracle Whip would be too sweet.

If you spread it really thin then it's not that bad calorically (but of course a little thicker layer tastes more yummy).

Really press in the coating, sometimes adding a bit when it is in the pan and pressing, for a thicker coating.

This is super easy and fast, and has a great flavor. Enjoy if you try!

This is my favorite! in a large skillet, over med-high heat, Add chicken, butter, Italian salad dressing, and a little milk,(until the chicken is just submerged), bring to a boil, reduce heat, cover for about 15 mins. flip it, cook another 10 mins or so. (make sure its done of coarse, time depends on how big the chicken pieces are). yummy! You can also just use butter, and BBQ sauce in a skillet, (same method as above) very simple and very good!

P.S. If your dieting, the Italian chicken is delicious using fat free dressing, low fat butter, and skim milk

Split the breast, if it's still whole. Remove the skin from the chicken pieces. Season lightly with a little garlic powder, black pepper and a tiny bit of salt. Brown over medium heat, turning occasionally. Should take about 20-25 minutes to prepare.

Bake the chicken with seasonings. Make some rice.
Take a can of cream of chicken soup or 2. Mix them with a 1/2 cup milk.

In a baking dish you baked the chicken in add the rice, and then the soup mixture. Bake 30-45 minuets. Take out of oven

ENJOY!!

Microwave smothered in B-B-Q sauce. Cover with plastic but vent.

Counting on the size of the pieces as to the time but I've cooked 4 leg quarters (cut in two) in 15 minutes.

Easy, fast and good.

Wrap ears of corn in plastic & nuke as a sidedish.

Thyme, lemon juice and garlic, crushed. Mix together and brush on chicken. Put in oven safe pan. Peel carrots and potatoes and cut to bite size. Put a little salt and rosemary and butter or margarine (shichever you have) on them and wrap them in foil. Place in pan next to chicken. Put in oven and cook at about 350.

if its a whole chicken or fillets with skin on:-
Get lots of crushed garlic cloves, and push them under the skin of the chicken without completely dislodging it.
Then roast (or grill if fillets).
The garlic permeates the whole chicken and you get great garlic chicken
