Indian Tacos
5 servings 30 min 15 min prep
1 lb lean ground beef
1 onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 dash Tabasco sauce
1 can pinto beans (I USE LEFT OVER I HAVE MADE)
2 cups cheese
shredded lettuce
chopped tomatoes
FRY BREAD
2 eggs
1 cup milk
4 cups flour
3/4 teaspoon salt
2 teaspoons baking powder
COMBINE MEAT, ONION, SALT, PEPPER AND TABASCO IN SKILLET.
BROWN.
COVER AND LET SIMMER WHILE MAKING FRY BREAD.
---------FRYBREAD (DIRECTIONS) ----------------.
BEAT EGGS, ADD MILK.
STIR IN BAKING POWDER,FLOUR,SALT, MIXING GOOD.
ROLL OUT VERY THIN ON FLOURED BOARD.
CUT INTO DESIRED SHAPES.
CUT SLASH IN CENTER OF EACH.
FRY IN OIL UNTIL BROWN.
DRAIN ON PAPERTOWELS.
THESE ARE CRISP TACOS.
WHEN FRY BREAD IS DONE, LAYER WITH MEAT, BEANS, CHEESE, LETTUCE, TOMATOE AND ENJOY!
Indian Pudding
8 servings 1½ hours 10 min prep
3 cups milk
1/2 cup yellow cornmeal
2 eggs
1/3 cup molasses
1/4 cup packed brown sugar
3/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon baking soda
1/8 teaspoon salt
whipping cream
Scald milk on saucepan over medium heat.
Reduce heat to low,slowly whisk in cornmeal.
Whisking frequently,cook about 5 minutes or until mixture thickens.
Remove from heat.
Beat eggs in small bowl,slowly whisk about 1 cup cornmeal mix into beaten eggs,gradually stir egg mixture back into hot cornmeal in saucepan.
Add molasses,spices,soda and salt.
Stir until blended.
Pour into greased 2 quart baking dish.
Bake at 325 degrees for 1-1 1/4 hours until sides are set,but center is still soft.
Serve warm with whipped cream.
Indian Rice
This is a wonderful rice dish. I serve it with grilled pork loin or grilled chicken breast.
4-6 servings 17 min 5 min prep
1 (129 g) bag instant brown rice (Success 10 minute)
1 (12 ounce) can crushed tomatoes
1 1/2 tablespoons curry powder
1 tablespoon paprika
1 teaspoon garlic salt
1/2 teaspoon lemon juice
Cut Rice Bag Open.
I use a microwave rice steamer. But a microwave bowl would work fine.
Mix all ingredients into bowl or cooker.
Microwave for 12 minutes or until rice is cooked and mixture thickens.

easy chicken curry
4 chicken breasts cut up into strips
1/4 cup olive oil
2 onions diced
1/3 cup curry powder or to taste
1/2 cup chicken stock
Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts and stock. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.

Check the foreign foods isle of the local grocery store (one that has a fairly large selection or some harder to find items). Many I have seen offer curry seasonings, jars and cans of curry sauces, various keehmas and such that seem to be fairly easy.

Indian Chicken Curry
INGREDIENTS
8 bone-in chicken breast halves, skinless
salt and pepper to taste
1 tablespoon olive oil
2 onions, peeled and quartered
1 teaspoon finely chopped fresh ginger root
1 teaspoon crushed garlic
1 tablespoon hot (Madras) curry powder
1 (15 ounce) can tomato sauce
1 (10 ounce) can coconut milk
4 whole cloves
4 pods cardamom
1 cinnamon stick
salt to taste
DIRECTIONS
Rinse chicken and pat dry; season with salt and pepper to taste. Heat oil in a large skillet over medium high heat, then saute chicken until browned. Remove chicken from skillet and set aside.
Saute onions in skillet until translucent; add ginger and garlic and saute until fragrant, then stir in curry powder.
Return chicken to skillet and add tomato sauce, coconut milk, cloves, cardamom and cinnamon stick. Season with salt to taste and stir all together.
Reduce heat to low and simmer until chicken is tender and cooked through (no longer pink inside), about 20 to 25 minutes.
