Butter chicken is so good...I usually just buy the cans of sauce (you add the butter or butter milk yourself with chicken and onions etc) or the package mixes from the International foods stores. But here is a lower fat recipe from scratch (If you don't have all the spices, get a Butter Chicken spice mix from the International food aisle in your grocery store for convenience or invest in the individual spices because you can use them again in all your Indian cooking....if you make curry often you probably already have most). This is one of my favorite types of chicken....so much wonderful flavor.
You can add other veggies if you want, like bell pepper or carrots or even broccoli.....and there are a million other recipes on the web, this one is very easy and low fat so that's why I chose it. Substitute a little bit of real butter or buttermilk to make it taste even better:)
Butter Chicken
Serves: 6
Ingredients
800g skinless chicken breasts
cooking spray
1 medium onion, diced
1 teaspoon crushed garlic (in jar)
½ teaspoon crushed ginger (in jar)
1 teaspoon cinnamon
1 teaspoon tumeric
1 teaspoon dried coriander
2 teaspoons paprika
½ teaspoon cumin
½ teaspoon chilli powder
2 teaspoons chicken stock powder
4 tablespoons no added salt tomato paste
1 tablespoon cornflour
1 x 375ml can evaporated light milk
Method
Cut chicken into bite sized pieces. Coat a large non-stick frypan or wok with cooking spray. Sauté chicken, onion, garlic and ginger until chicken pieces are nearly cooked. Add all spices and stock powder to pan. Combine with chicken for 1 minute. Add tomato paste and fold through chicken. Blend cornflour with milk in a small bowl then add to pan, stirring continuously. Mix well until boiling. Serve with basmati rice.
Variations
Replace chicken with either lean rump steak, butterfly pork steak or 600g tofu.
(I included another more authentic, less healthy recipe too....which would taste better).

I have made this several time with this sauce i found at whole foods. Its super easy and comes out perfect everytime.
1 Jar of Spicemode Masala Sauce
1.5 lbs of chicken thighs
1 can of coconut milk
1 can of fire roasted chopped tomatoes
Steps:
1. Brown meat in some coconut oil.
2. Add Spicemode Masala Sauce. (seriously thats it, no onions to caramelize or ginger / garlic to peel)
3. Then add Can of Tomatoes and Cover for 20Mins.
4. Add 1 Can of coconut milk, (this is to taste)
5. Simmer for another 5 Mins
6. Enjoy with rice or Naan.
You can also use cream instead of coconut milk.
I am lactose intolerant so i cant.

Indian Chicken Curry
INGREDIENTS
8 bone-in chicken breast halves, skinless
salt and pepper to taste
1 tablespoon olive oil
2 onions, peeled and quartered
1 teaspoon finely chopped fresh ginger root
1 teaspoon crushed garlic
1 tablespoon hot (Madras) curry powder
1 (15 ounce) can tomato sauce
1 (10 ounce) can coconut milk
4 whole cloves
4 pods cardamom
1 cinnamon stick
salt to taste
DIRECTIONS
Rinse chicken and pat dry; season with salt and pepper to taste. Heat oil in a large skillet over medium high heat, then saute chicken until browned. Remove chicken from skillet and set aside.
Saute onions in skillet until translucent; add ginger and garlic and saute until fragrant, then stir in curry powder.
Return chicken to skillet and add tomato sauce, coconut milk, cloves, cardamom and cinnamon stick. Season with salt to taste and stir all together.
Reduce heat to low and simmer until chicken is tender and cooked through (no longer pink inside), about 20 to 25 minutes.
