get some skinless boneles chicken breasts to sautee with the veggies...a little olive oil, too mmm delish. pepper is ok for ya, its the salt thats bad. sandwich with tomatos is good, at some turkey bacon and greens and its a healthy blt!

First of all, boiling veges can strip them of most of their nutrients, so you might want to consider steaming them in the future. When thinking about being healthy, think low fat and good complex carbs. How about taking your cooked veges and placing them in a blender along with some vege or chicken broth, a little half and half, some salt and pepper, and making a satisfying cream of vege soup? Instead of a whole wheat sandwich with cooked tomatoes, how about bruschetta? Toast your whole wheat bread and brush with olive oil and garlic. Take your cooked tomatoes and add fresh basil, oregano, and fresh ground pepper. Chop the tomatoes after you've drained the excess juice from them. Place tomatoe mixture on toasted bread and top with some lowfat mozarella or provalone cheese. Place under broiler until cheese melts. You can forgo the cheese if you need to.

Yes, pepper is OK. Add some low fat chicken or beef broth, or maybe tomato soup and water and you have good soup. I always liked fresh tomato sandwiches, not cooked, but if that's what you like, go for it. There are many salt substitutes that go well with cooked veggies, and many that do not. Trial and error is the way I learned. That, ( and a heart attack to start things off) was the best way for me to learn. there are countless websites and books about healthy diets.

When you boiled your veegies it ceased being healthy. You might want to drink the water you boiled all the nutrients out of the vegetables in.

I just ate steamed veggies on top of egg noodles and covered with tomato sauce. Why WOULD pepper be unhealthy???!!!!!

It sounds good add a bay leaf for flavour. You could also use that as a base for soup.
