Shepherd's Pie
Ingredients: 3/4 c. milk, 1 c. quick oats, 1 Tbsp. beef soup mix or crushed bouillon cube, 1 egg, 1 Tbsp. onion flakes, 2 tsp. parsley, 1/4 tsp. thyme, 1/4 tsp. pepper, 1 c. raw carrots, shredded, 1 lb. lean ground beef, browned, 4 c. hot mashed potatoes, 1 tsp. onion powder, 1/4 tsp. black pepper, 8 oz. shredded cheese
In a large bowl, mix together the milk, oats, soup mix, and egg. Add the onion flakes, parsley, thyme, pepper, carrots, and beef. Mix well. Turn mixture into an 11 inch pie plate and bake at 350 for 45 minutes. Mix potatoes with onion powder and 1/4 tsp. black pepper. Remove baked meat pie crust from the oven and drain the grease. Sprinkle with most of the cheese. Then spoon the potatoes on top and dot with the remaining cheese. Serves 6-8. Freezes well, remove from freezer and bake 30-45 minutes.
Sour Cream Beef Casserole
Ingredients: 1 lb. ground beef, 1 Tbsp. parsley, salt and pepper to taste, 2 cloves of chopped garlic, 1/2 pt. sour cream, 2 sm. cans tomato sauce, 3 oz. pkg. cream cheese, 1 lg. chopped onion, 5 oz. pkg. egg noodles, 1 tsp. sugar, 1/4 c. parmesan cheese.
Brown beef. Add salt, sugar, and garlic while browning. Add tomato sauce and simmer for 15 minutes. Mix sour cream and cream cheese, set aside. Cook noodles as directed. Alternate layers of noodles and ground beef mixture in a casserole dish. Cover with sour cream mixture. Sprinkle parmesan cheese on top. Refrigerate up to 48 hours. Bake 350 degrees for 15-20. Serves 6.

There are dozens of recipes on the internet for Vegans which are ideal for people who have insufficient lactase. Also, if you can find some Vegan cookery books by Rose Elliot, I can recommend them. Her first vegetarian one, "Not Just a Load of Old Lentils" is a classic; she's written vegan ones since. Her Pancake Gateau is a winner - layers of savoury pancakes with different coloured veges between each layer - you could use, corn, mushrooms, tomatoes - covered with a "cheese" sauce made with soya milk, and baked. When you cut into it, all the different coloured layers are revealed - very popular with kids. There is also a Vegan magazine which you could order at your local newsagent - it always has a load of recipes. Children who won't eat veges will often still love soups - liquidise or process cooked veg in a chicken or vegetable stock. Substitute cheese (Cheesly) really isn't very good, in fact some of them are downright disgusting! However, soya milk, soya cream, soya custard are pretty acceptable - PURE make a reasonable spread and their cream cheese substitute isn't a lot like cream cheese, but is sweeter so should be liked by children. You can buy cartons of "cheese" sauce mix (see Pancake Recipe above) and a sprinkling "cheese" which is supposed to be a substitute for Parmesan. There is another company on the Isle of Mull making "cheese" - they call it Sheeze, I think. I've only found it on the web for sale. Their cream cheese has won an award.

When I was a youngster, my mom used to prepare Brains N' Eggs for breakfast. It was a fairly regular breakfast, not at all unusual. So that's when I started eating them. I've enjoyed them ever since, but I can't find any on Capitol Hill. I'll admit the name of the dish is not the most appetizing, but try 'em, you might like 'em!
Ingredients
2-1/2 Tablespoons bacon grease
4 eggs
1/3 cup whole milk
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 can (5 ounce) pork brains in gravy (Rose Brand preferred)
Melt bacon grease in an iron skillet on low heat. Add pork brains to heated grease. Stir with a fork. Add salt and pepper and stir. Whisk eggs and milk together. Increase heat and add egg mixture to brains. Scramble to desired consistency. Serve immediately over toast. For a truly southern dish, serve with grits and apple butter.

More or less any of your favourite meals.
Leave covered on the counter until cooled Then place in fridge to cool further then freeze. Probably within an hour of being cooked
I will often freeze leftovers for a snack, at a later date

Of course, don't forget about spaghetti and meat loaf! I also like to fix a chicken/cheese/yellow rice (bound together with cream of...soups) concoction to freeze in small pyrex dishes.

u can freeze your whole meal what ever it is and it will still be good? like i freeze my vegtables like collard greens , Mac& cheese and what ever meat i cook.
