If you take the First Capital Connect train to Kings Cross Thameslink. A short walk will get you to St Pancras.
Trains leave Gatwick every 15 minutes at 01, 16, 31 & 46 minutes past the hour. Journey time is 46 minutes.
If you allow an hour to get out of Gatwick you should be a King Cross by 12:00. Depending how far you are then travelling, if you allow another hour in case the flight is delayed you will have time to eat before you catch the train.
I would book the train for sometime after 13:00.
