Pre-heat the oven to 325-350. While it's warming, shred some cheese. It can be any cheese you like. Dice some onions, and if you have any left over meat, dice it up, too, Lay one flour tortilla on the table and cover one half of it with cheese and the other ingredients. Fold the uncovered side over the other side, and repeat until you finish your ingredients. Place the tortillas on a cookie sheet and place in the oven You're only trying to melt the cheese and heat the other ingredients. Don't bake for more than 5 minutes. Remove from the oven and cut into wedges, and enjoy. Some Tabasco or salsa fresco goes nice with them.

Large flour tortillas
Grated cheese - either mild or sharp cheddar, or Monterey Jack
Olive oil or grapeseed oil

Optional:
Sliced mushrooms
Green onions
Black olives, sliced
Fresh tomatoes, diced
Chicken pieces
Avocado

Lettuce
Apple cider vinegar
Salt

Heat a large cast iron frying pan to medium high heat. Add a small amount of oil, about a teaspoon and spread around the bottom of the pan with a spatula (you could use butter as well). Take one large flour tortilla and place it in the pan. Flip the tortilla over a few times, 10 seconds between flips. When pockets of air begin to form within the tortilla, take a handful of grated cheese, sprinkle over the top of the tortilla, making sure that the cheese does not land on the pan itself. Add whatever additional ingredients you choose - green onion, sliced mushrooms, olives, tomatoes, etc. If you would like your quesadilla to be a chicken quesadilla, add some diced cooked chicken. Take care not to layer on the ingredients to thickly - this is a quesadilla, not a quiche.

Reduce the heat to low and cover the pan. The cast iron pan should be hot enough by now to have plenty of residual heat to melt the cheese and brown the tortilla. If the quesadilla begins to smoke too much, remove from the heat. After a minute, check to see if the cheese is melted. If not, return the cover and keep checking every minute until the cheese is melted. When the cheese is sufficiently melted, use a spatula to lift up one side of the quesadilla and flip over the other side, as if you were making an omelette. The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over every 10 seconds or so until it gets browned. Remove from pan and cut into wedges.

To make the lettuce to accompany the quesadilla, thinly slice some iceberg lettuce. Sprinkle some cider vinegar on it and some salt.

Serve with the lettuce, salsa, sour cream, and guacamole.

Simple Apple and Cheese Quesadilla

Ingredients

1 cup apples, sliced
1/4 cup shredded mozzarella cheese, or shredded cheddar cheese
1/2 tsp. cinnamon sugar
1 8 inch flour tortilla

Instructions
Places apple slices on the tortillas, top with cheese and cinnamon sugar,
and microwave on high, in batches if necessary, for about 20 seconds, or
until the cheese melts.


PICKLED ONION AND MONTEREY JACK QUESADILLAS

2 small red onions, sliced thin
2/3 cup cider vinegar
4 garlic cloves, halved
1/2 teaspoon whole black peppercorns, crushed
1/2 teaspoon coriander seeds, crushed
1/2 teaspoon cumin seeds, crushed
1/2 teaspoon salt
eight 7-inch flour tortillas
2 cups grated Monterey Jack
1/4 cup minced fresh coriander plus sprigs for garnish
2 scallions, minced
dried hot red pepper flakes to taste

In a saucepan boil the onions in just enough salted water to cover for 1 minute,
drain them, discarding the water, and return them to the pan with the vinegar,
the garlic, the peppercorns, the coriander seeds, the cumin seeds, and the salt.
Add just enough water to cover the onions and boil the mixture for 3 minutes.
Transfer the onion mixture to a glass bowl and let it stand for at least 3 hours
and up to 24 hours.
In a dry 8-inch skillet arrange 1 of the tortillas, sprinkle it with 1/2 cup of
the Monterey Jack, 1/4 cup of the pickled onions, 1 tablespoon of the minced
coriander, one fourth of the scallions, and red pepper flakes to taste, and top
the mixture with another tortilla. Cook the quesadilla over moderate heat for 4
minutes on each side, or until the cheese is melted and the tortilla is browned
lightly. Cut the quesadilla into 8 wedges and garnish it with about 2
tablespoons of the pickled onions and a coriander sprig. Make 3 more quesadillas
in the same manner with the remaining tortillas and ingredients.



Fruit Filled Quesadilla
* 10 (10" size) flour tortillas
* 2 teaspoons melted butter or margarine
* 1 tub (12 oz) soft, low-fat cream cheese
* 1 can (2l oz) fruit pie filling any variety
* Confectioner's sugar and/or cinnamon sugar

- Lightly brush the side of a tortilla with butter or margarine. Spread other side of tortilla with a thin layer of cream cheese.

- Spread 1/4 cup fruit filling on one half of the tortilla, and then fold the tortilla in half, pressing slightly to seal edges.

- In a large skillet on medium-low heat, cook tortilla until lightly browned (about 4 minutes) turn and brown the other side.

To serve:
Dust with confectioner's sugar or cinnamon sugar.
Each Quesadilla may be served whole or cut
into 2 to 4 wedges before serving.


Serve hot

Well, it's like a grilled cheese, basically; little different. Lightly butter inside of 2 tortillas, then put what you like, cheese is basic.
I like:
shredded cheddar alone, or with jalapeno slices.
cheddar, shredded leftover chicken meat, or beef.
Anything really (that you would put on nachos). Then cook in skillet like grilled cheese, turning once. Slice.
This ones different. Very good! We have this for breakfast often:
Lightly butter one side of tortilla. Slice a 1/2 avocado on top, salt pepper. Broil until warm. Put Provolone or Jack cheese on top and broil until cheese melts. Fold in half. Don't forget Tabasco!

Chicken-Vegetable Quesadillas:

2 large red bell peppers
1 pound thin asparagus spears
4 boneless, skinless chicken breasts
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
3 tablespoons lemon juice
1/4 cup mayonnaise
2 garlic cloves, pressed
1/3 cup chopped fresh basil
2 tablespoons chopped green onions
8 (10-inch) flour tortillas
1 (11-ounce) package goat cheese

Place bell peppers on an aluminum foil-lined baking sheet. Bake at 500° for 20 minutes or until peppers look blistered, turning once.

Place peppers in a heavy-duty zip-top plastic bag; seal and let stand 10 minutes to loosen skins. Peel peppers; remove and discard seeds. Slice peppers.

Coat asparagus with vegetable cooking spray; bake at 400° for 15 minutes.

Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook chicken in a large, lightly greased nonstick skillet over medium heat until browned. Add lemon juice, and cook 5 minutes or until chicken is done. Slice.

Stir together remaining 1/4 teaspoon salt and 1/4 teaspoon pepper, mayonnaise, and next 3 ingredients. Spread mixture evenly on 4 tortillas. Layer with roasted bell pepper, asparagus, chicken, and goat cheese. Top with remaining 4 tortillas.

Cook quesadillas in a large, lightly greased nonstick skillet over medium-high heat 2 minutes on each side or until browned. Cut into wedges.

Yield: Makes 4 servings or 8 appetizer servings

My 12 year old son would on medium heat in a non-stick frying pan heat a tortilla, add graded cheese and look for leftover meat to add. He would season with salt, pepper, onion and garlic powder. Cover with another tortilla. Flip after a couple of minutes, then in a couple more, pull it & cut with a pizza cutter into wedges.

1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
1 cup red bell pepper strips
1 clove large garlic, finely chopped
2 cups torn fresh spinach leaves
4 (8-in.) soft taco-size flour tortillas
1 cup 4 cheese Mexican blend, divided or whatever cheese you like
2 teaspoons butter
1/4 cup salsa

HEAT vegetable oil in large skillet over medium high heat. Add mushrooms, bell pepper and garlic; cook, stirring constantly, for 1 to 2 minutes. Add spinach cook just until spinach is wilted.

SPREAD half of mixture onto one tortilla sprinkle with half of cheese. Place second tortilla evenly over mixture. Melt butter in large skillet over medium high heat. Place quesadilla in skillet; cook for 1 to 2 minutes on each side or until golden brown and cheese is melted. Repeat with remaining ingredients. Top with salsa.

Just put cheese on a tortilla and fold it over. Put a tiny bit of oil in the bottom of a pan that's big enough to hold it. Heat it to med-high, put the quesadilla in, wait for one side to brown, flip it, and wait for the other side. By that time the cheese should be melted. It's my favorite morning snack.

You can also of course put refried beans, green onions, whatever else you like in them.

I just made it today. Take a tortilla and spread some butter on it put in a skillet, spread some cheese, when it browns, put another tortilla on top and flip.

It was good.

i just take a tortilla put some chesse in it and fold it in half then put it in the microwave for 30 -45 seconds
