i love scrambled eggs with tabasco and onion it is pretty good

Okay -- Eggs are one of my favorite foods but only if I prepare them. Restaurants overcook and cook too fast.
My #1 is what I call poach fried. Melt lots of margarine in a skillet then add in 3 or 4 eggs and cook them low heat until the clear turns white then turn over for 30 seconds then remove and put on the plate ( I don't season them it spoils the flavor).
My #2 is similar scrambled. Take 3 or 4 eggs and beat them in a bowl only until thoroughly mixed. Then 3 or 4 tablespoons of margarine melted in a skillet and when hot turn the heat to low and add the beaten eggs. Stir continuously with a large plastic or wooden spoon util bright yellow -- if they show whiteness anywhere there's too much heat. Season to taste (I only sprinkle lightly with black pepper) and serve on or with toast.
My #3 is poached. I poach 6 eggs (3minute boil) and carefully crack a hole in the top of the shell and spoon out the egg into a small bowl. And while all 6 are still hot I pour melted margarine (2 tblsps) over them and season with a light sprinkle of black pepper and serve with toast.
My #4 is the strangest of all. I fry 3 thin sliced bologna until golden brown and then cut the slices into 1/2 to 3/4 inch squares and set aside. Then I do the #2 scrambled eggs and as soon as the eggs start to firm up I add the pieces of bologna and continue to stir. Some people add a few pieces of green onions too - I don't.

I love fried eggs! I used to eat about 10 a week but ive cut right down now.
Fried eggs, on toast with lots of salt and black pepper. YUM!
If I do scrambled eggs, which I eat more of now, I like to add some bacon into the eggs before i microwave them.

Stuffed Eggs
12 eggs, room temp
1 tablespoon Clear Jel (or flour)
1/2 cup sugar
1 cup water, cold
1 egg
1 teaspoon mustard
2 tablespoons vinegar
3 tablespoons butter, melted
Place eggs in boiling water.
Bring back to a boil and boil for 10 minutes.
Cool in cold water.
Peel and split them lengthwise, remove yolks and place egg whites on a serving dish.
Mash yolks with fork until free of lumps.
Place the other 7 ingredients in blender and blend unitl smooth.
Add butter in a pan and cook this mixture until thickened and then cool.
Mix cooled mixture with mashed yolks stiring until smooth.
Fill egg whites and garnish with parsley and paprika.
Chill before serving.

Poached eggs are my favourite cos they're so light.
When I went to the States last year they have the BEST breakfasts - everywhere I went I had so much choice! I had poached eggs all the time!
But if you want special poached eggs, why not have Eggs Benedict? It is DEEEELISH!!

I make my husband breakfast sandwiches every day and he loves the way I do the eggs. In his breakfast sand which is cheese, sausage or bacon, and a scrambled egg. I always use the fat drippings from the meat, salt and pepper and just a dash of Worcestershire sauce. Split a biscuit or English muffin open and layer it up.

Hard boiled eggs! I normally break the whites in small pieces in dip them in a mixture of salt and pepper. Skip the yolk if you want to eat more. I love eggs too!
