Last year I made my son's first birthday cake using rolled fondant. It looked great, but with fondant it is so sweet so everyone ended up triming the fondant part of the cake and throwing it away. This year I am concidering marzipan since it tastes better. However, I never used it before. Is there any difference between working with marzipan and fondant? is it as easy or more difficult? will it dry and crake after a couple of hours? can i find it ready made just like rolled fondant?? which dyes should i use to color it? thanks:)

Actually, there is no difference between fondant and marzipan. Some cake recipes even recommend to put both marzipan and fondant. What I normally do when I decorate my Sacher Cake is that I would normally spread a thin layer of apricot jam on the top and sides of the cake before putting the rolled out marzipan. Then, I would make a chocolate glaze or icing and spread it over the marzipan. Please bear in mind that marzipan is also sweet.

Marzipan cake
1 (7 ounce) can almond paste
1/4 cup soft butter
1/2 cup sugar
1 cup ground almonds
2 eggs
1/4 teaspoon almond extract
1 cup flour
1 teaspoon baking powder
2 tablespoons water
1/4 cup apricot preserves

Preheat the oven to 350 degrees.
Butter and flour a 9" cake pan.
Cream the almond paste with the butter and sugar.
Mix in the almonds.
In a small bowl, beat the eggs lightly with almond extract and add to the creamed mixture.
Combine the flour and baking powder and stir into butter mixture.
Mix with a few strokes as possible.
Pour batter into cake pan and bake for 20-25 minutes.
Do not over bake!
Heat water and preserves and brush on the top of warm cake.

I love marzipan and icing . You can enjoy them even if you don't like the cake (everybody can't make Christmas cake but they can't spoil the marzipan and icing can they?...or can they? 'A spoonful of sugar helps the medicine go down'! A little cheese goes down nicely with the cake too!
