For a low calorie omellette just make sure you make it with egg whites. You could buy them in a carton instead off buying the full dozen eggs and taking out the yolk. You could also add veggies like bell peppers and onions. You can also add some meats like Ham. Just make sure its low fat ham and your good. Try to stray from adding any salt for flavor. Instead of salt add some pepper. Trust me it will taste great and good luck!

I make this one occasionally and it is satisfying. For two servings:
4 large eggs, 1/2 cup of chopped onion and chopped celery, 1/4 cup of grated carrot and a sprinkling of parmesan cheese.
Beat the eggs, put aside. sautee onion, celery and carrot in Smart Balance spread for two minutes over medium heat. Add beaten eggs and combine ingredients in pan. Turn over and add parmesan cheese. Healthy and satisfying.

Use eggbeaters instead of real eggs. They're much lower in calories and cholestorel(sp?). It helps. And lots of veggies too
