Hi there, Have you tried juicing? By combining needed veggies and adding a piece of fruit you like, often the flavor is pretty good. This will give you all missing nutrients. There are many good recipes for veggies, depending on what you like. If you like garlic...saute green beans, onions and garlic and it tastes wonderful. You need protein which you can get from eggs or cheese if you are not eating meat. what about fish? Can you drink V8?....there are a ton of recipes on the internet that will satisfy the needs of a vegetarian..good luck.

Prerequisites to vegetarianism
1. Understanding of vegetarian nutrition.
2. Means and opportunity to prepare what you need to eat.
3. Bountiful source of protein.
4. Commitment to the lifestyle that precludes excuses.
5. Priority setting that allows you to shop for the food you need.
6. And...uh...fondness for vegetables.

Is your health important or not? It doesn't sound like it when you say you have no time for breakfast....make time...or make a protein drink you can consume on the way to school.....a shake with protein in it can taste good, and be good for you.
And you don't say why you are a vegetarian...when it doesn't seem to be your thing.....who decided you had to be one?
Saying you need more food choices, but refusing to eat them won't work. Have you tried dips for the fresh vegetables...that helps a lot.....
If I add this up right.....
Make time to eat more protein before school...somehow!
If you won't stand in lunch lines, then you need to prepare a lunch for your next day to take with you....the other proteins are beans, eggs, cheese (I think)..., and fish like tuna, salmon.
Most vegetables taste good with sauces on them...in casseroles, etc...use soups to make your sauces, cheese etc. on them.
Baked potatoes are good.
And when you say you have to cook them, my guess is your parents are not for this plan of yours....am I right? Maybe you should listen to what they think you should be doing....for your own health's sake....and let them help you.
