Make a quick corned beef hash:

INGREDIENTS
6 large potatoes, peeled and diced
1 (12 ounce) can corned beef, cut into chunks
1 medium onion, chopped
1 can beef broth or 1 cup water plus 1 beef bouillon cube
Salt and pepper to taste

DIRECTIONS
In a large deep skillet, over medium heat, combine the potatoes, corned beef, onion, and beef broth. Cover and simmer until potatoes are of mashing consistency, and the liquid is almost gone. Mix well, and serve.

EDIT: Sorry, I misread corned beef hash for just corned beef.
Here's another recipe using canned corn beef HASH.

CORNED BEEF HASH CASSEROLE

24 oz. can corned beef hash
1 can of whole kernel corn, with liquid drained
1 can cream of chicken chicken soup
1 onion, chopped fine
1/2 c. grated cheese

Line baking dish with corned beef hash. Mix other ingredients. Pour in casserole, over corned beef hash and bake about 40 to 45 minutes at 350 degrees.

My Mom always fried eggs and put them on top of out Corned Beef Hash some thing to think about on St Pat's Day too

Yorkshire Corned Beef Hash

4 servings 1½ hours 20 min prep
1 pint cold water
2 bay leaves
3 ounces green lentils
1 onion
3 carrots
6 ounces button mushrooms, halved
1 lb potatoes, roughly chopped
beef stock cube (oxo)
1 can corned beef (cold from Fridge)

Place water in a pan, season and add the Bay leaves and Lentils, Simmer for 15 minutes.
Add onions, carrots and Mushrooms, simmer for 15 minutes.
Add potatoes and cook on low heat untill potatoes are nearly cooked.
Add Stock cube and cubed corned Beef.
Cook for a further 10 minutes, thicken if necessary.
Serve with crusty Bread as a hearty soup.

Hash Browns, Cabbage 'n Corned Beef Pie
Garlic & Jalapenos are optiponal I like a bit of zip.
5-8 servings 1½ hours 20 min prep

3 tablespoons butter, melted in an oven proof dish (Margarine)
1 (12 ounce) package frozen hash browns, thawed (shredded kind)
salt and pepper
3 cups green cabbage, finely shredded
1/2 cup onions, chopped
1/2 cup carrots, shredded
1/2 cup green peppers, chopped
2 cloves garlic, chopped (optional)
2 jalapeno peppers, finely chopped (optional)
3 tablespoons butter (Margarine, in addition to the original amount)
2 eggs, beaten
1/3 cup flour
1 (10 ounce) can cream of onion soup
1 tablespoon horseradish
1 tablespoon Dijon mustard
1 (12 ounce) can corned beef, chopped

Tightly pack the hash browns into an oven proof skillet (melted butter already in there) cook over low heat until the bottom is browned Sprinkle with salt& Pepper, set aside.
In another skillet melt the additional 3 tbsp butter (Margerine) stir fry the cabbage, onion, carrot, green pepper, Garlic (if using)& Jalapenos (if using) Only stir fry until they are just heated throught and the cabbage is tender (do not over cook- you want them still crispy) Apprx 5 minutes (More if you like your veggies cooked more) Combine the beaten eggs, soup, mustard, horseradish& Mustard.
Stir in the flour.
Mix the egg mixture with the veggies.
Put theCorned beef on top of the hash brown crust, pour in the veggie mixrure Bake 45 minutes in a 350F oven or until set.
Let stand 10 minutes, cut into wedges& serve.

We like it best when it is baked (350 F) with eggs on top. Make little depressions in the hash and drop the eggs in before you bake. Bake until the eggs are .... well, the whites should be solid, and the yellows not.

remove from can form into round burger type patties fry in medium hot oil and butter till golden brown on both sides . remove from pan,and fry up a couple of eggs if you have them.

I lightly fry it just like a hamburger patty. It falls apart when you flip it over but you can reshape it with your spatula. best served with ham, eggs and hasbrowns.
