Pecan Coffee Cake
1 3/4 cups sugar
3/4 cup butter
3 cups flour -- sifted
1 tablespoon baking powder
1 teaspoon salt
1 1/8 cups milk
4 egg whites
1 cup brown sugar
2 tablespoons cinnamon
3/4 cup flour
3/4 cup butter
2 cups pecans
TOPPING: Cream sugar and butter until soft and smooth.
Sift together flour, baking powder, and salt. Add sifted ingredients
alternately with milk. Fold in egg whites beaten stiff.
Pour into large baking pan. Mix topping together until it forms pea-
sized crumbs. Blend in pecans. Spread over the top of batter and
bake at 350 degrees F for 40-50 minutes. Cut into squares.
Cranberry-Hazelnut Coffee Cake
A moist coffee cake with a fine, cake-like texture and swirls of cinnamon sugar.
Excellent for brunches or a snack.

Ingredients:
1 3/4 cups cake flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter
1 1/2 cups dark brown sugar
4 eggs
2 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon
3/4 cup whole milk
1/4 cup dried cranberries
1/4 cup chopped toasted hazelnuts
1/3 cup dark brown sugar
1/4 cup white sugar
1 teaspoon ground cinnamon
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Butter and flour a 9 inch
springform pan. Sift together the flour, baking powder, baking soda and salt;
set aside.
2. In a large bowl, cream together the butter and 1 1/2 cup sugar until light
and fluffy. Beat in the eggs one at a time, then stir in the vanilla and 1
teaspoon cinnamon. Beat in the flour mixture alternately with the milk. Fold in
cranberries and hazelnuts. Pour batter into prepared pan. Mix together 1/3 cup
brown sugar, 1/4 cup white sugar, and 1 teaspoon cinnamon; sprinkle over cake,
and swirl through the batter.
3. Bake in the preheated oven for 75 to 80 minutes, or until a toothpick
inserted into the center of the cake comes out clean. Allow to cool.
Note:
As an alternative to the cinnamon topping, pour half of batter into pan,
sprinkle in half of cinnamon sugar, then pour in rest of batter and top with
remainder of cinnamon sugar. Swirl through batter with a knife.
Apricot Coffee Cake
A combination of apricots and cardamom pair up nicely
in this coffee cake.
Nonstick spray coating
2 cups all-purpose flour
1 package active dry yeast
1/2 teaspoon ground cardamom or nutmeg
1/2 cup water
2 tablespoons sugar
2 tablespoons butter or margarine
1/4 teaspoon salt
1/3 cup refrigerated or frozen egg product, thawed
1/3 cup finely snipped dried apricots
Sugar-free apricot spread (optional)
1. Generously spray a 1-quart casserole or souffle
dish with nonstick coating; set aside. In a large bowl
combine 1 cup of the flour, the yeast, and cardamom or
nutmeg. In a saucepan heat and stir the water, sugar,
butter or margarine, and salt just until warm (120
degree F to 130 degree F) and butter or margarine
almost melts; add to flour mixture along with the egg
product. Beat with an electric mixer on low speed for
30 seconds, scraping the bowl constantly. Beat on high
speed for 3 minutes.
2. Using a wooden spoon, stir in apricots and
remaining flour (batter will be stiff). Spoon the
batter into prepared casserole. Cover and let rise in
a warm place until nearly double (50 to 60 minutes).
3. Bake in a 375 degree F oven for 30 minutes. (If
necessary, cover the cake loosely with foil the last
10 minutes of baking to prevent overbrowning.) Remove
the coffee cake from casserole or souffle dish. Cool
slightly on a wire rack. If desired, serve warm cake
with apricot spread. Makes 12 servings.

INGREDIENTS

3 tablespoons all-purpose flour

1/2 cup chopped pecans

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch springform pan. Sift together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the blueberries. Pour batter into prepared pan. In a small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and chopped pecans. Cut in butter until crumbly. Sprinkle over the batter.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Easy Streusel Coffee Cake

1/4 cup vegetable oil
3/4 cup sugar

1/2 cup milk
Topping
1/4 cup packed brown sugar
1 tablespoon butter or margarine, softened
1 tablespoon flour
1 teaspoon cinnamon
Preheat oven to 375.
Stir together flour, sugar, baking powder, and salt.
Combine egg, milk, and oil.
Add flour mixture to egg mix.
and mix well.
Pour into 9 inch greased pan.
Combine topping ingredients and sprinkle over batter.
bake for about 25 minutes.

Yea This is my favorite coffee cake recipe..its apple coffee cake so its a little different than just normal coffee cake but it is SO SO SO GOOD. i highly reccomend!
1 1/2 cups packed light brown sugar
3/4 cup all-purpose flour
1/2 cup butter, chilled and diced
2 teaspoons ground cinnamon
1 cup chopped walnuts
3 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 cup butter, room temperature
1 1/2 cups white sugar
3 eggs
2 teaspoons vanilla extract
16 ounces plain low-fat yogurt
2 Granny Smith apples - peeled, cored and finely diced
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt cake pan.
To make streusel: In a medium bowl, mix brown sugar, 3/4 cup flour, and cinnamon. Cut in the butter with a fork until crumbly. Stir in walnuts.
In a medium bowl, stir together 3 1/4 cups flour, baking powder, and baking soda. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. Then stir in the vanilla and yogurt. Gently stir in the flour mixture just until blended.
Pour 3 cups of the batter into the Bundt pan, sprinkle with 1/4 of the streusel, and layer with apples. Sprinkle with 1/2 the remaining streusel. Pour in the remaining batter, and top with the remaining 1/4 streusel. Lightly pat the top layer of streusel so it sticks to the cake batter.
Bake 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack 15 minutes. Place cookie sheet over pan and carefully invert both. Remove Bundt pan, and let the cake cool completely.

cream 2 sticks(1 cup) of butter with 1 1/2 cup of sugar, add 4 eggs and whip till fluffy, add 1 tsp of almond extract, blend in 2 cups of flour and 2 tsp of baking powder. Whip this fluffy and put in a 9 X 13 glass pan. Put canned fruit on top, I like a can of apple slices and a small bag of cranberries spread evenly. Cherries also taste very good, so do apricots, peaches and probably any fruit you could make a pie from. Bake it at 350 for 55-60 minutes, in an aluminum pan it may take a little longer. I just made one this morning.

Cake:
Dissolve 2tsp coffee in a little hot water.
Cream 8oz butter with 8oz sugar in a bowl.
Add 8oz sifted SR flour.
Beat 4-6 eggs (depending on size).
Add coffee and eggs to bowl.
Mix well.
Pour into a greased tray and bake gas 5 for 40mins.
Make icing using:
8oz icing sugar.
2tsp coffee disloved in a little hot water.
Mix together.
Spread over cake when cold.
