This is a recipe for a traditional Texas chili--this means no beans, tomato sauce, or other fillers. This is really good and can be adjusted quite easily for the level of heat you wish to attain. This recipe is fairly mild.
3 Tomatoes, med
1 Texas Sweet Onion lg, fine chop
1/4 t Oregano, dried, pref. Mexican Oregano
2 t Paprika
1 Garlic clove, large, fine chop
4 lb Beef ground for for chili (about a 80/20)
1 T Lard
4 Scallions, in bunches, chopped
5 Bell pepper(s)
5 Serrano chiles, fresh
1 lb Chorizo sausage - hot
4 Garlic cloves, med, fine chop
2 t Salt
4 T Red chile (hot - ground)
4 T Red chile (mild - ground)
3 T Cumin seeds
Water or beer (Shiner Bock works nicely)
Puree the first four ingredients plus one clove of the garlic in a
blender or food processor (using the steel blade). Scrape the mixture into a large heavy pot and add the beef.
Melt the lard in a heavy skillet over medium heat. Add the scallions, bell peppers, serrano chiles, sausage, and the
remaining garlic, and cook until the onions are translucent and the sausage is browned.
Place the cumin seeds in a 300' oven for a few minutes until lightly browned. Remove seeds from the oven and crush them with a mallet. Stir the vegetables into the beef and tomato mixture. Add the salt, ground chile, cumin, and enough water or beer to cover. Bring to a boil over medium-high heat, then lower the heat and simmer, uncovered for 4 to 6 hours. Taste and
adjust seasonings.

here is my Recipe!!!

Blackbean Chicken Chili

1 1/2 Lbs Boneless skinless chicken
2 Cups Diced Onion
1 Cup Diced Bell Pepper
4 Cloves garlic minced
2 15 - 16 oz Cans Diced tomatoes
2 14-15 oz Cans Blackbeans rinsed and drained
1 Cup water
2 Tblspns Chili Powder
1 Tspn Basil and 1/4 Tspn Pepper
Mexican Shredded Cheese
Sour Cream

Method:

In a large pot cook chicken,onion,Pepper and garlic until meat is done and onion is tender.

Stir in Blackbeans,undrained tomatoes,Tomato sauce,Water,Chili Powder,Basil and pepper.

Bring to a boil. Reduce heat. Simmer Covered for 2o minuets. Stir occasionally.

Top with Shredded Cheese and a dollop of Sour Cream

Use a variety of beans along with the traditional kidney. Van De Camp's light red kidney beans with the liquid are the best canned kidney beans, I've found.

A can of each, black beans and butter beans, add flavor, color and different textures to the chili.

Add a little cocoa powder and oregano! They are classic flavors in Mexico and great in Chili. Honest! A little chocolate is wonderful in chili!

If it's too thin, try adding re-fried beans. They add texture and taste.
