I agree with the trifle suggestion. It is very easy to assemble one with a quick trip through the grocery. I've adapted a Nigella Lawson one to a no-cook recipe.

Black Forest Trifle

2 small chocolate pound cakes (from the bakery section)
1 jar black cherry jam
1/2 cup brandy or kirsch
2 boxes Hershey's European-style Chocolate Mousse Mix (dark chocolate) or similar (remember to get milk or whatever the box calls for)
1 large (15 oz) can Oregon or bing cherries (NOT pie filling)
1/2 pint heavy whipping cream
Cocoa powder for dusting or a dark chocolate candy bar to grate on top

Cut the pound cakes into slices about 1/2" thick and make jam sandwiches with the cherry jam. Line the bottom of a trifle bowl or other large clear glass bowl with the sandwiches, squishing them in to completely cover the bottom. Sprinkle over the liqueur and let soak while you make the mousse or pudding. Drain the canned cherries and arrange over the jam sandwiches, pushing a few to the very edge of the dish (for the pretty factor). Spoon the mousse or pudding over this and then refrigerate to set completely. Just before serving whip the cream with about 1/4 cup of powdered sugar and maybe a dash of vanilla. Mound that on top of the pudding and dust with cocoa powder or sprinkle with grated or shaved chocolate.

I've taken this to two pot lucks when I had to make something at the last minute and people have always raved. It's even better with homemade chocolate pudding, but sometimes you just don't have time.

My favorite (impressive) no bake recipe is a sorbet pie.

You need one graham cracker crust, 3 pints of fruit sorbet, and some pretty fresh fruit to top it with (I like mixed berries, kiwi, peaches, whatever). I normally try to get 3 different colors of sorbet, like strawberry, peach and pineapple. Let the sorbet soften a little at room temp so that it's mushy but not melted, and then one container at a time, empty it into the pie crust and spread flat to make layers. The last layer will mound up higher in the crust, or if you want it flat, you'll have leftovers.

Once all the sorbet is in the crust, re-cover the best you can with the original lid from the pie crust or cover in plastic wrap and put in the freezer for an hour (or more if you have time). Before you're ready to serve, cover with the fresh fruit. I try to make a pretty design. They just cut and serve. It looks really impressive, and like you spent a bunch of time making it.

This is really simple and good.

1 graham crust
1 pkg. pistachio pudding mix
1 can (~15 oz.) crushed pineapple slightly drained
1 12 oz. tub of Cool Whip

Put the pineapple and the mix in a bowl and stir. Let sit for 10 minutes. Fold in the Cool Whip, dump it in the crust and put it in the fridge for about 4-6 hours.

It's my favorite dessert, courtesy of my great-aunt.
