The Lamb of God that takes away the sin of the world.
The placing of the hand on the head identified the sinner with the sacrifice and showed substitution. The personal slaying of the animal showed death and punishment. the shedding of blood that the law required pointed to Jesus sacrifice. The animal that was taken far away showed our sins being removed as far as the east is from the west. The ceremonial cleansing for the priest showed that he was not the medial tor and that fact that they had to do it every year showed that animals and priest could not take away sin. The curtain before the most Holy place showed that the way to God was not yet prepared. These and many other images all pointed to Christ.
