Do you have anything you could use as a pizza crust? I would suggest a tortilla or english muffin but a bagel would work and so would french bread or something similar...
Couple slices of tomato, feta cheese (olives, etc. - whatever else you have on hand), sliced chicken breast. Drizzle with olive oil and bake in oven just until "crust" is golden and cheese is melty.

Have what I had yesterday - a chicken, bacon, club. (Hopefully, you have some bacon or ham, maybe). Slice up your chicken breast, fry up some bacon, slice a tomato, add some lettuce and Miracle Whip(please, not mayo), put it between two pieces of toast, and there you are! A great sandwich. Good for lunch or dinner!

Make a chicken and bacon salad. Just use lettuce, onion, tomato, and celery for you veggies. then, if you have any chicken tenders, or chicken nuggets in your freezer, bake those, cut them up and add them to your salad. And you can either use bacon bits, or if you have any left over bacon from breakfast, chop it up and add it. Ranch dressing is really good with it.
