My fiance is a meat and potatoes kind of guy. He is very picky. I love any kind of vegetables and often have to make 2 dinners. The only thing I found that he likes is Beef stir fry I would like to make healthier recipies he will eat but I can't find any "normal" ones. The ones I find have weird spices and ingredients that I would only use for that recipie. A good web site/cookbook would be appreciated as well. Also, how do you sautee mushrooms so that they taste like the ones you get in steakhouses.

I have this same problem
Get a turkey breast and take the skin off soak it in fat free italian dressing in the fridge for four hours

Put it in the roast pan with a little water and add salt pepper and garlic powder and dised onions to the water put the lid on and cook at 350F* untill cooked I think that it is 20mins/lbs you want the middle of it to reach 180C* not sure what that is in F

you can add potatoes and carrots to the water of this not all of them have to be covered the water will steam them

When cooking other meals I cook sweet potatos ahead of time I cook allot at once and keep them in an aie tight container in the fridge they heat well in the mic

And I cook squash either boiled or in the mic ( in the mic cut in half and seed it butter it and put on a plate and cook in mic on high for 20 mins at a time after the first time I put in for 10 mins at a time it does take awhile) Or you can do the same but cook in oven at 325F* in a dish it will dry out a bit to help this add water to the dish After it is cooked take the top layer off and scoop out flesh put this in an air tight container in the fridge

I waite for them to cool before putting the lid on so they do not swet

When cooking steak add spices and broil it instead of fring and take off all fat before cooking
Make sure that it is off the bottem of the pan I use a cooling rack and a pan under it all the fat drips off

You can do the same for all meats

And for french fries that are better for you

wash the potatos and dry them with paper towels

cut into fries and put in a big bowl add just enough olive oil to cover them and them put on a cookie pan and add salt and pepper cook at 350F* turn over every ten min's depending on how thick they are it will take between 15 to 60 min's to cook

I friend of mine uses sweet potatos because they are better for you but I have never tried this but she loves them

To make spicy fries add cyanne pepper pepper papreka and BBQ spice

Olive oil is one of those fats that are good for you and you need so if you need to use oil use olive and for cooking in a pan I put the oil in a spray bottle (just a water mister for plants) and put it on a fine spray and that way you use allot less

5 Healthy Dinners That Will Satisfy Your 'Meat and Potatoes' Man

This is how Outback Steakhouse does mushrooms.

1 (10 1/2 ounce) can beef broth
1/2 cup onions, diced
2 (16 ounce) cans small whole mushrooms, like button mushrooms (plus the juice of one can or jar)
1/3 cup Burgundy wine

Place beef broth in a saucepan and simmer onion for 15 minutes.
Add mushrooms, along with juice from 1 can or jar and wine.
Simmer another 15 minutes.
Serve with steak.

You're all set. I do this and my family has felt so much better ever since. One thing I do every week is make my "mixture". I simply sautee up 2 onions, 1 bell pepper and 2 cloves of garlic with some salt and pepper. You can do anything with this. This is the basic mixture, depending on my plans for the week depends on what i'm making depends on how much I cook. You can take this basic mixture, sautee some spicy meat (I like chicken sausage), a diced carrot and zucchini. Then add a large can of organic diced tomatoes and 2 quarts of chicken stock with a sprig of thyme and a bay leaf. Let it simmer about 1/2 hour. Then add a can of drained white beans. It makes a lot, so you can freeze it like this. When you are about to serve it add a palmful of small pasta to the boiling soup. Don't add the pasta until you are ready to serve or it will get really soggy. Another thing you can do is add some of the veggie mixture to ground meat (I generally use turkey) with some of the simple sauce you mentioned above. Hollow out some crusty bread and toast it. Fill with the meat mixture and top with a slice of provalove cheese, put the top back on the bread and toast in the oven. It's really good.

Try schiskabobs ! Buy skewers ,meat and veggies of your choice.I use beef tips-cherry -tomatoes-mushrooms- onions-and green peppers.Leave toms whole and cut veggies in med size .Simply grill to temp(med to med well) turn every couple of Min's until done.A little salt pepper and light garlic powder will do fine.Oh yeah,soak the skewers in water 20 Min's to keep them from burning. Mushrooms-wash them first.Then saute them with a little oil - salt -pepper - and garlic powder.I have managed restaurants for many years... Also don't forget to cook some rice or baked potato's,and any other veggies that you like.Feel free to grill them along with the kabobs.
