Beef & Bean Casserole
6 ounces cooked ultra lean ground beef
1/2 cup chopped onions
24 ounces cooked pinto beans, canned to save time
15 ounces stewed tomatoes, canned
1 tsp ground cumin
6 ounces part-skim mozzarella cheese
1 cup self-rising cornmeal, plus
2 teaspoons self-rising cornmeal
1 cup skim milk
Saute beef and onion with cumin.
Place in a sprayed casserole dish.
Layer next beans tomato and cheese.
Mix milk and corn meal together.
Pour on top of other ingredients.
Bake at 400 degrees for 20 to 25 minutes until golden brown.

If your doctor is infering that he needs more fiber, then I would just get some fiber pills, crush them up and sprinkle it in his juices or whatever. However, for a pinto bean recipe, I would take some Velveeta cheese and make refried beans out of the pinto beans, mix the cheese with the refried beans and WOLLA! I'm sure any kid would enjoy a cheesy bean dip with chips, or just so he can stick his finger in it. Hope this helps. If that doesn't work though I would think of things your son likes and mix the beans in with it...for example if he likes scrambled egges mix some refried beans in with it and make breakfast burritos.

How about a simple bean dip, just whirled in the blender with a little olive oil, lemon juice, and seasoning, perhaps a touch of tahini....then give him little chunks of veggies or toast to dip in it. At that age, they love fiddly foods. You can adjust the thinness of the dip with a little water, and had some herbs for flavoring. Its one of my daughters faves. She also likes them mixed with a little taco sauce (I make it homemade so its not spicy, and wrapped up in a tortilla wrap, or bread, then rolled and cut into little spiral slices (a little lettuce and tomato for color) You can also incorporate them into muffins, or make potato/bean cakes. My 12 year old is vegan and LOVES her beans. Bean soup is another option. Sorry I cant give recipes, but I am the type of cook that just chucks stuff in the pot till it looks and smells right, lol. When he gets a little older, consider bean tacos, a staple in our house. Good job on doing healthy things for your lil guy. (also, dont limit it to pinto beans. We use lentils, chickpeas, split peas, black beans, kidney beans, etc. They are very versatile, and red lentils are delish cooked in veggie stock-quick and easy

My husband (who has 2 sons) said make a 15 bean and ham soup, and slightly puree his serving so it's easier to eat. Then you can have the whole beans part of it.
Or you could just make a refried bean thing and put it on soft tortillas depending on if he can handle spices and tortillas.
