My fiance aint been feeling too good recently so on monday I'm cooking him a roast (his fave) to cheer him up. Thing is I've never done it before. I've got 512g of Chicken Thighs and NO idea what to do with them. Any help?

Garlic & Lemon Chicken Thighs

4 cloves garlic, chopped
6 tablespoons fresh lemon juice
4 teaspoons Worcestershire sauce
1 teaspoon salt
2 lbs chicken thighs

Puree garlic, lemon juice, Worcestershire sauce& salt.
Combine marinade and chicken in a plastic bag.
Marinade at room temperature for 15 minutes.
Arrange chicken on greased rack in a broiler pan.
Roast chicken at 425 for 25-35 minutes until cooked.

Wash the chickens,pat dry.Put aside. In a mortar and pestle( almeres ni tagalog) or in a mini food processor,put 10 garlic cloves,2 teaspoons of thyme( herb),1 teaspoon of low sodium salt( for those who are watching their salt intake) or iodized salt.Add 3 tablespoons of olive oil. Pulse the food processor,just until the ingrdients are well blended. Put the chickens in a baking pan and rub the mixture to the chicken and bake at 350 degrees for 1 hour. Turn the chickens on the other side and bake another 1/2 hour,until brown,but not burn.

HINT: The thyme leaves should be taken out from the stems before using.

The trick I use when roasting a whole chicken is to stuff the cavity with an apple and an onion (cut the apple and get the loose seeds out - quarter the onion and stuff in both ends) Then I use Olive oil on the outside with my seasonings. I never put water in the pan. I also never over cook the meat. I cook for an hour at 375* and then check it with a meat thermometer. Let the meat rest for 10 minutes before you start carving the bird. This helps the juices to redistribute throughout the meat...Otherwise the first bite will be the only moist bite you get.

Roast Chicken is very easy. All you really need is butter salt and pepper..(or any other spice you like). You can add vegetables like onions carrots potatoes and celery and cook until veggies are tender and when you stick a fork in the chicken the juice runs clear. If the veggies start getting a little dry add a small bit of water to the pan. Make sure you keep basting the chicken with the butter throughout cooking. I'm not sure your oven temp settings are where you live but I cook mine at 350 degrees Fahrenheit.

Wash them good and marinate them with Italian dressing,or your favorite marinade sauce.Salt and pepper them lightly,and rub curry on them if you wish.
You can either grill them,or bake them in an oven at 350 for an hour or until done.
I like to have a bowl of BBQ sauce handy and brush the sauce on if I am grilling them .
Pre -prep on the marinade ,put them in the fridge before cooking with the marinade on them for at least an hour,do not let the chicken sit out too long.
Also remember to wash the chicken in cold water,not hot or warm water.
Use a wire rack with a pan underneath to cook the chicken in the oven to prevent a grease fire,or greasy chicken,this way the drippings go into the pan,not back into your food.

why don't you try to make chicken caserole if that don't work why don't you take him out to eat
