I would like for their to be leftovers to last at least until Tuesday. I don't have a slow cooker, so that's out. Please give me some ideas. I need dessert ideas also.

Roasted chicken, stuffing, potatoes, peas, carrots, and cranberry jelly.
Make a soup from the carcass - need more veggies, chicken, and either pasta or rice.
Chicken sandwiches, chicken salad, chicken tacos, chicken quesadillas, to name a few for the left over chicken.

Dessert - cherry pie (president's day) or a cheesecake.

I usually cook a roast on Sundays. We have leftovers for a couple of days. Buy a roast of beef, a nice round or sirloin or even a short-rib roast. You could marinate it in olive oil, and red wine and garlic and oregano for a few hours, then roast slowly, fat side up at about 325 degrees. Put some peeled and quartered potatoes and a few carrotts and onions around it for the last hour of cooking and make gravy when it is done. That is pretty simple. If you do not do the marinade, then just season the meat with some steak spice or even some onion soup mix rubbed all over it. Put some wine or beef broth in to maintain moisture. Dessert would be a nice apple pie with cheese or vanilla ice cream. The beauty of this meal is it can be put in the oven around 1 pm and done nothing to for a few hours. Another nice thing to use is those oven cooking bags then you just dump everything in them at once and stick it in the oven for a few hours.

Lasagna- you can make two pans and def. get two meals out of it...if made enough to get 3 days out you would probably be sick of it by then. It's a good filling Sunday type of dinner, since you can add garlic bread and a salad to it. Also Pot Roast w/gravy...using whole potatoes and carrots and dinner rolls. Monday you could have roast sandwiches. Sorry I'm stumped on dessert at the moment LOL

Pot Roasts are always nice for Sunday dinner and make plenty of leftovers. And you just need a large stockpot, you don't have to use a slow cooker.

The great thing about pot roasts is that you can make more or less leftovers by adding more or less vegetables.

Roasted seasonal vegetables, carrots, potatoes, turnips, onions, etc. Roast beef or chicken. If you have a dish which can take the oven heat, you could simmer it all day in the oven. Baked apple filled in the center with a little butter, brown sugar and walnuts or pecans. Apple brown betty with ice cream or an apple/pear/cranberry crumble. This is the time for comfort food with the cold. Or even stewed pears with chocolate cake. Banana pudding???

Thai Steamed Chicken, Vegetables, and Brown Rice

1 1/2 Lbs Boneless Chicken Breast
1 Cup Thai Peanut Sauce
1/2 Lime Sectioned
Peper To taste
1 Lb Bok Choy
Stir Fry Vegetables
1 Cup Mirin Rice Wine
Garlic Finely Chopped
2 Tblspns Finely chopped Ginger root
Scallions finely chopped
Medium Red Pepper diced

Method:
Slice Chicken Breast diagonally into 4 strips;Combine with 1/4 cup peanut sauce and lime juice in a medium bowl. Season with salt and pepper;Mix well.Let stand 10 minuets.

Cut Bok Choy into quarters,layer the bottom of both steamer baskets with Bok Choy.Divide Stir-Fry vegetables and pepper around Bok Choy.

Divide Chicken mixture evenly and layer over vegetables. Cover.

Combine 1 1/2 cups water,Rice Wine,Garlic,and Ginger into Wok,Heat to a rapid boil.Liquid must be hot enough to create steam below food,but must not touch it.

Place layered baskets in pan;Steam about 15 minuets or until chicken has reached internal temperature.

Carefully remove from heat.

Add the remaining peanut sauce to liquid in the pan.Bring to a boil;Cook until reduced by half.

Drizzle sauce over meal and top with Scallions


Brown Rice: Buy the boil in a bag rice for convienience.

If you don't have a steamer then put the Vegetables in a pan with a tblspn or so of water. and steam them.


Peanut Sauce: You can buy a bottle from the store for convienience.


You can double the meat and ingredients to suit your needs! This recipe serves 4


As for Desert :

SPICED ALMOND DIAMONDS

Dough:

3/4 Cups Unsalted butter
3/4 Cup Sugar
1 egg
1 Tspn Cinnamon
1/2 Tspn All spice
1/4 Tspn salt
1/8 Tspn Nutmeg
1 Tspn Vanilla
1/2 Tspn Almond extract
2 1/2 Cups All Purpose Flour


Topping:

1 eggwhite beaten with 1 Tblspn Water
1 1/3 Sliced Almonds
1/4 Cup Raw sugar

Heat oven to 350

Line a 15 x 10 baking sheet with foil;letting it extend 2 inches above at both ends.

Beat ingredients except flour in a large bowl on medium to blend.

On low slowly beat the flour until mixed.

With FLOURED hands Press the mixture over the bottom of the lined pan.


Brush dough with egg white; Sprinkle with almonds. Top with waxed paper;press nuts into dough. Brush with eggwhite;Sprinkle with sugar.

Bake 32 to 34 minuets or until edges are golden,nuts are toasted. While Hot lift by the foil to cutting board.

Cut Diagonally into 36 Diamonds.

Cool 5 minuets

Bake a Turkey, there are so many things you can make the 2nd and 3rd day,I suggest turkey salad sandwiches in tuesday
