Vanilla extract is a liquid extracted from the vanilla bean. It's the same bean that is used to make vanilla ice-cream

The real stuff is made from the liquid of the vanilla bean pods and alcohol this has a stronger flavor then the more common artificial vanilla extract so you use less and to me it has a better flavor

The artificial vanilla extract is made from water /alcohol /caramel /colour /artificial flavour. This has a milder flavor than the real stuff

Please note that any recipe that is really old like from your grandmother or from before they would have used the real stuff so if you are using the artificial you may have to use more

They sell the vanilla beans in some food stores like the bulk barn
