Stiff shells dubiously called tacos which are sold outside of Mexico are an industrial invention unknown in Mexico. Authentic Mexican tacos are made with SOFT corn tortillas, which are warmed through then spread with a filling and often topped with a spicy salsa, lettuce and some sour cream before being rolled or folded up and eaten with the hands.
Authentic Chicken Taco Filling
6 boneless, skinless chicken breasts
1/2 cup orange juice
1/2 cup lemon juice
1/2 cup lime juice
1/2 small onion, diced
4 cloves garlic, minced
1 teaspoon Mexican dried oregano
1 tablespoon achiote paste
Salt and pepper
Combine all ingredients in a large bowl. Marinate chicken for 30 minutes.
Grill on a charcoal grill. (optional) Slice chicken breasts into strips.
Makes 8 servings.
Authentic Carne Asada Taco
3 pounds flank steak
1/3 cup white vinegar
1/2 cup soy sauce
4 cloves garlic, minced
2 limes, juiced
1/2 cup olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
1 white onion, chopped
1/2 cup chopped fresh cilantro
1 lime, juiced
2 large tomatoes, chopped
2 jalapeno peppers, chopped
1 white onion, quartered
4 cloves garlic, peeled
4 dried New Mexico chile pods
1 pinch salt and pepper to taste
1 (32 ounce) package corn tortillas
2 cups grated cotija cheese (optional)
2 limes, cut into wedges
DIRECTIONS
Lay the flank steak in a large glass baking dish. In a medium bowl, whisk together the vinegar, soy sauce, 4 cloves of garlic, juice of two limes, and olive oil. Season with salt, black pepper, white pepper, garlic powder, chili powder, oregano, cumin and paprika. Whisk until well blended, then pour over the steak in the dish. Turn over once to coat both sides. Cover with plastic wrap, and marinate for 1 to 8 hours.
In a small bowl, stir together 1 chopped white onion, cilantro, and the juice of 1 lime. Set aside to use as a relish for the tacos.
Heat a skillet over medium-high heat. Toast chile pods in the skillet for a few minutes, then remove to a bowl of water to soak for about 30 minutes. Preheat the oven to 450 degrees F (230 degrees C).
Place the tomatoes, 1 onion, jalapenos, and 4 cloves of garlic onto a baking sheet. Roast in the oven for about 20 minutes, until toasted but not burnt. Place the roasted vegetables, and soaked chile pods into a blender or food processor, along with salt and pepper. Puree until smooth.
Heat vegetable oil in a large skillet over medium-high heat. Cut the marinated flank steak into cubes or strips. Cook, stirring constantly, until the meat is cooked through and most of the liquid has evaporated.
Warm the tortillas in a skillet for about a minute on each side to make them pliable. Tortillas may also be warmed in a microwave oven. Arrange two or three tortillas on a plate, and lay a generous amount of beef over them. Top with a sprinkle of the onion relish and a large spoonful of the pureed salsa. Add as much cheese as you like. Garnish with lime wedges, and serve.
Authentic Mexican foods cna be labor intensive but, are well worth the effort.

I love taco's but hate the mess so now we put all of the ingredients on on plate and use chips (white corn or yellow corn)
Get the taco seasoning mix from the food store and fallow the directions I put in more water so it will take longer to cook I find that this way the seasoning cooks in more. Cook it until most of the water is gone.
I also dice tomato's and green onions cut up lettuce fine and shred a med Cheddar cheese
Taco sauce or salsa it comes in mild med hot or suicide
some people like re fried beans
sour cream
guacamole
Or any thing Else you like
I put every thing in their own dishes and have a big bowl of chips and let people serve themselves and then they can have what they want
This way is allot easier for kids it's not so messy and every chip can be different so you can get them to try different things and if they don't like it you only waste a little bit

I like both. I like to layer the shells. Use a hard shell on the inside and a soft shell on the outside, like they do at Taco Bell, the worst excuse for Mexican food on the planet, but this is a good idea.
I like either Old El Paso or Ortega taco seasoning mix. They're both quite good.
Use either ground chuck or ground turkey. Ground turkey works really well with tacos. They are less greasy and you CANNOT tell the difference, at all. Really.
Ingredients:
Hard Taco Shells
Soft Taco Shells
1 lb ground turkey or beef
1 can spicy bean dip (found in a can in the snack section of market. Frito Lay makes the one I usually buy)
Shredded lettuce
Chopped tomatoes
Shredded cheddar cheese
Sour cream
Ortega thick and smooth mild or medium taco sauce.
Prepare taco seasoning and meat according to package directions.
Lay the soft tortillas flat and spread bean dip on them.
Place the hard shells inside the soft shells. The bean dip will seal the shells together.
Layer taco meat, shredded lettuce, tomatoes, sour cream, shredded cheese, and taco sauce to taste inside the hard shell.
Enjoy!

if you're gonna go for a real taco, not a taco bell taco, you're gonna go soft shell. I'm talking a real taco here, not an americanized taco. you get one of those small tortillas. you can do the corn, but I'm partial to the flour. cook some ground beef up, throw your tortilla in the pan with the drippings, to warm it up, put the ground beef in the tortilla, throw a little grated cheese on it, and some cilantro, and there you have it. a perfect taco.

We always use soft. Easier to eat. I like to use 1lb ground turkey. Fry it up with some onion and garlic. Then add about 1/2-3/4 cup of water and some cumin and chili powder, probably about 2 tsp of both but do it to your liking. Then served with warm soft tortillas, salsa, grated cheese, chopped tomato and green onion, and shredded lettuce. You can also serve sour cream, re fried beans and guacamole.
Guacamole is very easy to make yourself. Use a ripe avocado and mash with some lime juice. Add some chopped green onion and tomato. Then season with cumin, salt, pepper and fresh cilantro.
A quick recipe for guacamole is to mash the avocado and mix with some salsa.

Taco's for us, too, tonight!! I am making both hard and soft shell...we are having friends over for dinner and it is a great dish for the kids, too! I just use a store bought taco seasoning, but double it up and let it cook for a long time. Cumin works great, too, and is less salty.

Best of both worlds.....my mom is mexican and she fries corn tortillas in oil in a skillet untill almost hard, but not quite, then puts fresh grated cheese in them while they are still hot and adds meat mixture after that. We usually just cook the hamburger meat with onion, garlic and taco seasoning, then let everyone add what other vegtables they want (diced tomatoes, diced onions, lettuce, sour cream) YUM!!!!

If you are watching your weight the soft shell is the best choice as it is not fried in oil so doesn't have the extra fat and calories. Other than that it is a matter of taste.

Hard shell!!! Half the fun is trying to eat it without spilling everything out of it! I also like the texture of the hard tortilla better than the soft.
