Chicken curry

I recommend binning the tin of curry sauce and making it proper! Here's my tried and tested version. You should be able to get everything at Tesco/Sainsburys!

With curries, the exact quantities are never really essential. Real cooking is not chemistry. Something along the following lines will work just fine:

1 medium onion finely chopped
a few garlic cloves finely chopped.
a few tablespoons of finely chopped fresh ginger root
2 teaspoons of cumin seeds
2 tablespoons of hot chilli powder
1 teaspoon coriander seeds
1 teaspoon of fennel seeds
4 or so cardomom pods (break them open first so the seeds can come out)
4 or so cloves
1 teaspoon mustard seeds
1 bayleaf
1 short piece of cinnamon stick
Fry all the above in a few tablespoons of vegetable oil for about 5 minutes. Use ghee instead of the vegetable oil if you want to show off(!)

Then add:
about a quarter of a tin of chopped tomatoes or passata. Or, lob in a few chopped fresh tomatoes instead.
2 teaspoons of turmeric (careful it stains clothes!)
A tin of coconut milk
salt and pepper
a tablespoon of sugar

Then cook on a low heat (or in an oven) for about 1.5 hours. Just before the end, add in some pre-ccoked chicken pieces (you can just boil some breast pieces for a minutes)

Put the 3 chicken breasts into a oven dish (either whole of diced) then pour over the curry sauce and add any vegetables you want or none at all then cook in the oven till the meat is cooked (about an hour) Make sure the chicken is cooked though before eating.

One Pot Curry & Rice

Prep Time: 20 min
Total Time: 35 min
Makes: 4 servings, about 1-1/2 cups each

1/2 cup KRAFT CATALINA Dressing
1 to 2 Tbsp. curry powder
1 lb. boneless skinless chicken breasts, cut into strips
2 stalks celery, chopped (about 1 cup)
2 large carrots, thinly sliced (about 1 cup)
4 green onions, sliced
1 can (14-1/2 oz.) chicken broth
1-1/2 cups instant white rice, uncooked
1/2 cup chopped dried apricots
1/2 cup PLANTERS Cashews
2 tsp. ground ginger

MIX dressing and curry powder; pour over chicken. Cover and refrigerate 10 minutes.
POUR chicken mixture into large skillet. Add celery, carrots and onions; mix well. Cook on medium-high heat 2 minutes, stirring occasionally. Stir in chicken broth. Bring to boil. Cover skillet. Reduce heat to medium-low; simmer 5 minutes.
ADD rice, apricots, cashews and ginger; mix well. Remove from heat. Let stand, covered, 5 minutes. Stir before serving.

KRAFT KITCHENS TIPS
Food Facts
Curry powder is a blend of up to 20 spices, herbs and seeds. Since curry powder loses its pungency quickly, store it in an airtight container in a cool dry place and use within 2 months.

Substitute
Try using fresh chopped ginger in place of the powdered ginger. Or, add some heat to the dish by adding a dash of dried red chilies.

Just throw the lot in a casserole dish put in the oven it will be lovely, messing about with all these ingredients is a load of rubbish. If you want a good indian curry get it from a take-away, far easier.

try this indian way...

take 3-5 medium sized onions..chop them finely
take green chillies about 5 of them..(adjust this bcoz i donno whether you like spicy food or not)
take 2 medium sized tomatoes..
garam masala..(i donnp whether this is available..but you can prepare this at home...just grind some cumin seeds, coriander seeds, elachi, cardomom, and other indian spices...dont take large quantities..just take little of each or may be u can use curry sauce)
marinate chicken for an hour with salt, chilly powder, turmeric, mint leaves and chilli powder...

now put oil in a large bottomed pan...add onions..fry till brown..(not soo much) add tomatoes and green chilles..fry till tomatoes get tender and nicely fried..
now add chicken pieces and fry in a low flame...(put a lid on top and pour some water on the lid..this ensures tht chicken is cooked)stirring occasionally...
add the masala powders...and garnish...you can also add veggies of your choice(half boiled and fried ones to this...)

thsi tastes great...

hope this helps
