I suggest you place the greasy food on a wire rack (one you use to cool cookies, for instance) with the paper towel under the rack.
De greasing food on any absorbent surface, like paper towels or brown bags from the grocery on allows the food to sit in grease. Drain the grease instead by using my suggested method.

Well, getting in a bit late here. But as the others have advised napkins or a non-fuzz towel. There are two basics in my house I never get low on, I have them stockpiled: one is ketchup! The other is paper towels!!

I have been using coffee filters for years. They absorb the grease real well & the food generally doesnt stick to it like some paper towels. Also they are alot less expensive for me because I tend to buy in bulk. Happy cooking.
