hello coolmicky..
I make chow mein this way..

take oil or butter in a bottomed pan, chop onions length wise and fry them..
fry some finely chopped carrots...(chop length wise)
add capsicum,finely chopped beans,cabbage..
make sure that all these veggies are half boiled...(or less than half boiled..you may even prefer it raw)
add some long green chillies...as per your tase..
add ajinomoto(tsting salt)
just a pinch of sugar..
add a may be 1 tsp tomato sauce,1tsp soya sace,1 tsp green chilli sauce and 1/2 tsp red chilli sauce..(add these ingredients as per the quantity of noodles you take..i just told this to tell you the proportion..)
now,add some garam masala,a little bit of chat masala, salt, chilli powder(if you wish to have it colourful and spicy)

now add the half boiled noodles and mix this mixture and noodles well..

remember, after you boil the noodles, make sure you mix oil to the noodles to avoid them being sticky..)

after mixing throughly, garnish with raw onions, capsicum, fried chillies..or whtevr you wish to...

hope this helps
