I'm making eclairs today,, but I made too much pastry cream and i was wondering if I could freeze it, so I dont have to make again soon

It can be frozen if tightly wrapped for up to 6 months without loss of flavor or texture.
An easy way is to lightly spray an ice cube tray with cooking oil and fill the trays. After they freeze pop out and put in a ziplock bag.
You can also 1/2 fill a ziplock bag and squeeze all the air out, zip closed and flatten. It wlll thaw more quickly and be easer to store in freezer.
