I've got a couple of odd ingredients in my cupboard that I haven't used yet, like: chestnut puree, Pimentos in olive oil, fish sauce ( i do use this for Thai curry), Tamarind paste, sun dried toms ( I use in spag bol)and a fine wine vinegar. In my freezer I've got Fillet and rump steak and chicken breasts I can use. Any ideas? Thanks.

mmm...may be you can cook the chickenbreasts....you can marinate them using other ingredients and vinegar..if think you need a tangy taste, may be u can marinate these with a little bit of tamarind paste..(but fish curry with tamarind paste makes a great combination) you can fry onions needed for this curry in olive oil..and ofcourse, after adding all the spices, you can add chestnut puree and make a different tasty chicken fry..!

may be,i think this would taste good(but this a bit of indian style cooking)
take olive oil.add some finely chopped onions, green chillies and chestnut puree and add spices(what evr you wish to...may even consist of a powder of elachi etc..)
marinate chicken with the sauces and also vinegar(this makes chicken tender) as per your taste..

fry these chicken pieces...

may be you can have this for your lunch or dinner..!

i donno how far this helps..

hope this helps

Filet Mignon with Cranberry-Chestnut Sauce

4 beef tenderloins (each 4 oz, 3/4" thick)
1/2 c canned or boxed beef broth
1/4 c canned chestnut puree
1/4 c canned whole berry cranberry sauce

Whole cranberries (garnish)
Season steaks with salt and pepper to taste. In large nonstick skillet coated with cooking spray, cook steaks over medium-high heat, 3 minutes per side. Remove from skillet. In same skillet, combine broth, chestnut puree, and cranberry sauce. Stir constantly 1 1/2 minutes. Serve steaks with sauce. Garnish with whole cranberries, if desired.
