If you are going to eat eggs, make sure they are from Organically fed, range fed, chickens. Also, if the egg has been fertilized by the rooster, the bad cholesterol level drops dramatically. You can usually only find that type of egg on a farm. As long as you eat healthy and have a balanced diet, 2 eggs are fine every two days.

Provided you do not have high cholesterol, one egg per day (which is what your cosumption is) is perfectly healthy.
Eggs are an excellent cheap source of protein.
But why stop at scrambled as they are so versatile?
One thing i do to use up leftover veg is to make a fritatta or spanish omelette (2nd has more egg). You just heat up the veg in a frying pan, maybe cook an onion forst for more flavour, add any bits of ham or bacon you might have, pour over eggs (number according to quantity of veg and people eating, 1-2 per person), let them set, then finish off under grill. Cheese on top is good. Also crafty way to mask veg for picky kids! I often make it from scratch with mixed frozen veg too.

The average person isnt supposed to eat more than 7 eggs in a week, unless you are on a special diet or are trying to gain weight (like a body builder)

You should only have about 2-3 eggs a week, according to most health experts.
