Do you use a skillet and have the heat on until smoking and place th sirloin on it for a few mins until cooked. REason I ask i because i had the best tasting steak the other night and it was slightly burnt on the edges so i guess it was chargrilled, or would they have used chargrill seasoning with it too?

Actually the term Charbroiling is when you put it in the bottom of your oven where you cook it fast. Char-grilling isn't really a name per se. Charcoal grilling however is when you cook on an open type grill. that you can cook however fast or slow you desire. However, fast cooked steaks will have the outside somewhat crispy. But that steak is going to be rare or medium rare. Sadly fully cooking most steaks starts to toughen the meat.

Yes, but your skillet needs to be cast iron because they get hotter than, say, stainless steel or aluminium pans. It's the temperature that gives the special flavour.

The other thing to do is make sure that sirloin is not straight from the fridge. If it is, it'll be at about 4 degrees C or lower. If you were to put that cold meat on the skillet, it would cool the pan slightly and you lose some of the effect. Let the meat rest at room temp for a couple of hours so that its starting temperature is higher.

Also, don't put any fat or oil in the skillet. Enough fat will melt off the sirloin to suffice. That'll help you get the chargrilled effect.

Finally, don't use chargrilled seasoning, ever.

No, definitely not a skillet.

The best (and the only acceptable) way to cook a steak is chargrilling. Which is exactly what it sounds like.

You get a grill (BBQ if you're american :P) light some CHARCOAL, WAIT for them to turn slightly ashy (that means they're hot and ready). Now that your grill is ready all you need to do is throw the steak on. How long you grill it depends on your preference. Usually 3 minutes per side for medium.

Another thing: you can buy specially flavoured charcoal (yes the COAL is flavoured) which enhances the flavour of the meat. Instead of it just tasting smokey and grilled it'll taste like mesquite or teriyaki or whatever coal you buy.

ONE last thing: Marinate your steak in a ziplock bag overnight in the fridge. You can use virtually anything you want depending on the flavour your going for. But marinating it overnight makes sure it's REALLY tender and juicy going on and coming off the grill.
