how to explain that out of the dads 1 brother and 3 sisters, his brother and one of his sisters has green eyes when nobody in the past generations in our family has had green eyes. they all had dark brown.
Also my dad has quite dark skin(brown) and my mum has yellowish skin but my sister is fair/white skinned.
Is this all not strange, and does it indicate that the characteristics of a baby are not always hereditary.....

Absolutely. Genetics and heredity are a crazy this to study, and scientists have pretty much proven that anything is possible. My mom's parent's proved that brown eye color is dominant theory is bogus when they had three children, two with green eyes, one with blue eyes. My grandfather had green eyes, my grandmother had dark brown. My son's eye color is the color of my mothers. They look nothing like mine of his fathers. Anything can happen, and I truly believe you can go back several generations to find where the traits come from.

I was born into a family where my mom has dark brown hair, my dad has blonde hair, and I have bright red hair. The family member closest to me that had red hair was 5 generations back on my mom's side of the family. Oh and I have 1 green eye and one grey eye, this also came from very far back in my family tree, so yesI would say your eye color or skin color can come from ANYONE in your family no matter how big the generation gap is

All of what you say is completely normal in terms of genetics. The characteristics of babies ARE hereditary, it just goes back further than most people consider.
Not to plant suspicion, either.. but when doing genealogy, it is not unheard of to find unsuspected adoptions, prior to anyones memory. In one family I worked, I found a record of adoption in the late 1860's in Texas. It was actually recorded along with land deeds, of all places.

Someone has to carry the gene. It might come from way way back but its still there. My dad has red hair and no one else alive in the family has it but someone had to have carried the gene.
