wrap the joint completely in foil. Put in roasting dish and cook for 4 hours at gas mark 4.
remove from oven and leave to cool over night leaving the foil intact.
The next day (3 hours before serving) slice the joint and place the slices of meat into a roasting dish then add 1 pint of beef stock over and cover with foil. Cook for another 3 hours at gas number 4.
The meat will be beautifully tender!

Quickly sear the roast on both sides. Place in a crockpot (high temp 1st hour then low) along with 2 large onions, quartered, 3 ribs of celery, 1 garlic clove, crushed, 1 bay leaf and 1/2 C beef broth & 1/4C red wine. Sprinkle with salt & pepper.
Cook for 7 hours, then add 2 C baby carrots. Continue to cook 1/2 hour then add wedged red potatoes, turn to high and cook 20 minutes longer until potatoes are tender.
Move to serving platter and thicken broth to make gravy.

i usually pot roast in beef stock and cook slowly.. i find that cooking it this way it doesnt shrink as much... then make gravy out of the stock... yum
