I love to cook, and I would love to have a great recipe for Cannoli. It would be even better if it was reasonably easy, but if thats impossible then difficult is fine. Thanks so much! (Please only answer if you have tried the recipe, there is nothing more annoying then attempting to cook a terrible recipe.)

Okay, to the person who just "answered" my question...You do not know what cannoli is!!! It's a dessert! Were you thinking of Manicotti?

Not really difficult - just great.

1 15-ounce carton ricotta cheese
3/4 cup powdered sugar
1 teaspoon vanilla
1 ounce bittersweet or semisweet chocolate, grated
4 ounces bittersweet or semisweet chocolate, chopped
1 tablespoon butter
12 to 14 purchased cannoli shells
3/4 cup finely chopped pistachio nuts
1 cup whipping cream

For filling, in a medium bowl, stir together ricotta cheese, sugar, and vanilla until almost smooth. Stir in 1 ounce grated bittersweet chocolate. Cover and chill up to 6 hours.

Meanwhile, in a small saucepan, heat and stir 4 ounces bittersweet chocolate and the butter over low heat until melted. Remove from heat. Transfer to a small bowl. Dip both ends of the cannoli shells in chocolate, letting excess drip off. Sprinkle chocolate ends with pistachio nuts. Place on a wire rack placed over waxed paper to dry (about 45 minutes).

When chocolate is dry, in a medium bowl, beat whipping cream at medium speed of an electric mixer or with a wire whisk until stiff peaks form. Fold into the ricotta mixture. Spoon filling into a decorating bag fitted with a large round or open star tip (Make your own bag by using a resealable plastic bag; seal bag; snip off a small corner of the bag.). Pipe filling into shells. Cover and chill up to 2 hours.

If you really love chocolate, prepare cannoli as directed, except stir 1/4 cup unsweetened cocoa powder in with the ricotta cheese.

this is the best cannoli recipe (i HAVE used it before, don't worry)...enjoy

1 cup confectioners' sugar
1 pint part-skim ricotta cheese
1/2 cup blanched slivered almonds
1/3 cup mini semi-sweet chocolate chips
1 tablespoon amaretto liqueur
12 cannoli shells

1 tablespoon confectioners' sugar
1 tablespoon unsweetened cocoa powder
12 maraschino cherries
DIRECTIONS
In a large bowl, stir ricotta cheese with 1 cup confectioners sugar until combined. Add almonds, chocolate chips and almond liqueur.
Carefully spoon into cannoli shells (or pipe from a pastry bag), filling from the center out.
Sprinkle individual serving plates with powdered sugar and cocoa, or sprinkle on cannoli. Garnish plates with cherries.
Note: 1/8 teaspoon almond extract mixed with 1 tablespoon water can be substituted for the almond liqueur.

Her is a easy one

1 1/2 c. Ricotta cheese
3 tbsp. sugar
1 tsp. vanilla
1 1/2 tsp. ground cinnamon

Mix all ingredients with beater until smooth. Chill until ready to use.

Just line them all up in a dish.
Pour lots of sauce. Any you like. salsa . Grated cheese on top.
And bake till done.
