So far the best pancakes in my home are the orange pancakes. I just use the following recipe and sub OJ for the milk, add a sprinkle of vanilla, cinnamon and nutmeg to my liking. This also works for the cheating moments when using a box mix.
They came out light, fluffy and full of flavor.
INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle to the desired size. Brown on both sides and serve hot.

well if you already made them you can add fruit or chocolate or cinnamon and sugar...but if you haven't made them...here are two AMAZING pancake recipes that are more exciting than the normal plain ones!enjoy-
Chocolate Chip Pancakes
1 1/4 cups flour
1 tablespoon sugar
1/4 teaspoon cinnamon
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
4 tablespoons melted butter
3/4 teaspoon vanilla
1 cup chocolate chips
Preheat fry pan (griddle or skillet for Americans).
Combine flour, sugar, cinnamon, baking powder and salt in a large bowl.
Mix together wet ingredients and beat into dry mixture until smooth.
Fold in chocolate chips.
Pour or spoon batter into fry pan in desired quantity.
Flip when top begins to bubble, then cook a minute more.
Banana Raisin Pancakes..these taste great with honey!
1 cup old fashioned oats
1 cup all-purpose flour
1/4 cup packed golden brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
3/4 cup plain yogurt
3/4 cup milk
2 large eggs
1/2 teaspoon vanilla
2 ripe bananas, mashed
1 cup raisins
1/4 cup unsalted butter, melted
additional melted butter
Whisk together first 6 ingredients in medium bowl.
Whisk yogurt, milk, eggs, and vanilla in another medium bowl to blend.
Whisk dry ingredients into yogurt mixture just until blended.
Fold in mashed bananas, raisins, and 1/4 cup melted butter.
Brush nonstick griddle or skillet with melted butter; heat over mediun heat.
Working in batches, pour batter by 1/3 cupfuls onto griddle.
Cook pancakes until bubbles form on top and bottoms are golden brown, about 2 minutes.
Turn pancakes over cook until bottoms are golden brown.
about 2 minutes.

Finely chopped apple bits from a fresh apple and Cinnamon is very good or you can finely chop fresh banana and add that to the mix. of course blueberries are good too!

depends on what you like. You could try adding strawberries,blueberries,bananas,raspberries,and lots of other fruits that you might like. Alot of people also like using chocolate chips in their pancakes. Try different items and see what you like best. Good luck!

Apple, with or without the skin. Sometimes I just dice it fine with a knife, sometimes I use the food processor and sometimes I grate it with the grater, medium fine (the same side you would do cheese with, not the fine side you would use for a lemon). Just stir it into the batter.

I freeze really ripe (almost black) bananas then thaw and mash a half and add it to the batter. By the time they are that ripe, they have developed lots of sugar.
